When you heat things up like breakfast sandwiches in the microwave why does the bread get hard?

The liquid in the bisquits are taken away from the food when reheated.

Microwaving boils the water in the cells of the bread, which causes it to evaporate, resulting in hard, dry bread. You might try wrapping the product in a damp paper towel and not nuking it for as long.

the water evaporates from the bread,all through the bread plus the heated water overcooks parts of the bread by steaming it.

i don't but it really sucks when that happens. it happend to my burger buns, it really pissed me off
