Most of the mainline companies require many hours of flying in smaller aircraft before the pilots get to the "heavy iron." Also, they have to get their ATP rating (Airline Transport Pilot) which requires them to have over 1500 hours of specific types of flying and training accomplished before they take a difficult written test and what is called a Practical (oral) exam. Then they have to get a type rating for the specific type of aircraft (737) that they are going to fly. Every year both the Captain and the First Officer have to maintain proficiency in the type of aircraft and operations that they perform on a daily basis. This is why they are safe. The smaller the airline, the less training pilots have had. Some may be hired on without the ATP license. But they have to start somewhere to build their hours.

Lufthansa "provides" the best training, but not all of their pilots are the best. It all depends on the exprience levels and company policy. Lufthansa is very selective though only about 7% of the cadet program applicants pass.
