Almost all cameras used by serious photographers at the turn of the 20th century were view cameras. Many manufacturers made them, and they were mostly hand-made wooden devices. Kodak was one manufacturer of these types of cameras, before they got heavily into consumer cameras (like the Brownie). The negative formats were generally large, say 5x7" or 8x10". Prints were made by contact printing rather than enlargement. Negatives were generally glass plates but film was just starting to be used.

Moving on to the "Jazz Age" smaller cameras came into use, but were still view cameras. I own a German Ica "Ideal 225" in 9x12cm format, made in the early 1920s. It originally was designed to use glass plates but later could be used with cut sheet film. Also the Graflex "Speed Graphic" was made from 1912 to 1927 and probably would have been used extensively during this period.

During the depression (1930s) the Speed Graphics continued to be used quite a bit, and pictures by photographers like Dorthea Lange were often done with such cameras. Cameras using 35mm motion picture film, such as the Leica, started to come into use during this period.

I would argue that most of your big advances in the history of photography come about because of issues of practicality, and affordibility which is why I chose these cameras.
As you may know photography up to about 1900 was a costly affair and not exactly practical. Kodak changed everything with the introduction of roll film, and the Brownie camera http://en.wikipedia.org/wiki/Brownie_camera
Thirteen years after the introduction of the Brownie we were introduced to the 35mm camera which was designed by Leica http://en.wikipedia.org/wiki/Leica
Perhaps the next big evolutoin in photography comes much later in the history of photography almost 40 years after the introduction of the 35mm camera, the SLR camera which was first introduced by Contax in 1949. http://en.wikipedia.org/wiki/SLR_camera
You could probably also say that the polaroid camera was the next biggest leap
Of course you may want to also include the development of polaroid film in 1929, but I just don't see this camera and its associated film as important as the previous cameras. http://en.wikipedia.org/wiki/Polaroid
