hello everyone... ok well ive noticed latley i love to cook!!!! but my husband is picky.. lol... he LOOOOOOVES any kind of chicken... and if i could ever good a steak right he would love that to. BUT i dont have a grill..... anyways.. anyone out there know any good recipes?? that are pretty easy and wont take me 4 hours to make?

If you have a broiler, you can make a great steak by marinating it over night with salt, pepper onion, soy sauce, garlic and a light rub of coffee grounds--cover with beer, and broil topped with bacon fat or butter--delicious!

Oven Fried Chicken

Make three "dipping stations"

Season the chicken with all purpose seasoning.
(Use boneless skinless chicken breasts if possible)
Cover in first bowl which you have filled with flour & a little extra seasonings

Dip in second bowl which contains two eggs beaten.

Cover in third bowl which has bread crumbs in it!... Italian or whatever style you like.

Simply place it on a cookie sheet in the oven at 350degrees truning after 15 minutes for a total cooking time of 24-30 minutes.

This is easy and delicious! Serve it with mashed potatos and corn for a Southern Style. Make it into chicken parm by topping with hot marinara sauce, sprinkling cheese on top and serving with pasta. You could also make it a part of a healthy meal and serve it with rice pilaf and veggies. It's perfect any way you chose!

O.K. is he a gravy man too. (How many aren't lol) This is so awesome and delic. and super foolproof and easy.

Crock pot

about 12 pieces of cut up chicken. i like dark meat so i usually pick up a package of thighs and a package of drumsticks, but any one will do.
flour, salt and pepper your pieces and shake off excess.
fry in oil until browned.
place in crockpot, 2 beef boullion cubes, 1/2 can chicken stock. Add browned chicken. Top with 1 can cream of mush. soup, 1can cream of celery soup, and 1 can cream of chicken soup. A couple splashes of worshtechire. One sliced onion and about 1/4 cup parmesean cheese. Cook on high 4 hrs. The chicken should be falling off the bone. So tender. Yum. I serve with mashed potatoes and use the soup/gravy for over the potatoes.

here's a great recipe & it's simple, we love it...
Pan Broiled Steak with Bourbon Sauce
4 sirloin strip steaks, 1-inch thick
1 tablespoon coarsely crushed blackpeppercorns
2 cloves garlic, minced
1/4 teaspoon salt

Bourbon Sauce
4 ounces butter
2 tablespoons chopped onion
1 clove garlic, minced
2 tablespoons Bourbon
2 teaspoons Worcestershire sauce
1/2 teaspoon dry mustard
dash Tabasco sauce
Trim excess fat from steaks. Press crushed peppercorns and garlic into both sides of steaks and let stand at room temperature for an hour. Heat a heavy iron skillet over high heat. Oil bottom lightly, or use a piece of steak fat to grease. Sprinkle about half of the salt in the skillet. Sear steaks quickly on one side. Remove and add remaining salt to skillet. Sear steaks on other side. Reduce hat to medium and continue to cook until done to your liking. Remove to a warm platter and keep warm. Pour off excess fat from skillet. Melt butter over low heat; add onion and garlic and sauté until tender. Add bourbon, Worcestershire sauce, dry mustard, and Tabasco. Blend well and simmer for 2 minutes. Pour over steaks.

I am full of good recipes...Most of them I just throw stuff together that goes well and it is all just a big experiment anyway..
As far as chicken goes though, I do have some good recipes depending on what he likes.
If he likes pasta dishes:
1 jar of Alfredo sauce
1 jar of Marinara sauce
1 small package of diced ham
1 package of Provolone Cheese (sliced already)
1 package of Italian Cheese (the kind that is mixed up already and shredded)
How ever much chicken you want
1 box (12 oz) of pasta (rigatoni or large sea shells)
1 bundle of mushrooms, already sliced
garlic, onion and tomato to taste.

Cut up Chicken and sautee in pan with olive oil with the mushrooms. Add onion, garlic and diced ham until done.
Boil pasta shells until done.
Drain pasta and pour chicken mix into a 13x9 pan. Add pasta and jars of sauces. Mix together with half of the Italian cheese mix.
When mixed up lay Provolone cheese slices on top.
Bake @ 375 in oven until the cheese is golden brown. Dice tomatoes and sprinkle on top when you take it out of the oven.

Juicy Steak
INGREDIENTS
1 tablespoon butter
1 (1/2 pound) frozen Delmonico (rib-eye) steak
1 tablespoon Worcestershire sauce, or to taste
1 teaspoon meat tenderizer
1 clove garlic, minced
salt and black pepper to taste
DIRECTIONS
Preheat your oven's broiler. Spread half of the butter on top of the frozen steak. Pour Worcestershire sauce over, and sprinkle liberally with meat tenderizer, garlic, salt and pepper.
Place steak on a roasting pan. Broil for 6 to 8 minutes, remove steak from the oven, and flip over. Spread butter and season just like the other side. Return to the broiler, and continue cooking for 6 to 8 minutes, or to desired doneness.

Chicken Adobo
INGREDIENTS
1 (3 pound) whole chicken, cut into 8 pieces
1/2 cup soy sauce
3/4 cup distilled white vinegar
1 bulb garlic, peeled and crushed
2 tablespoons thinly sliced fresh ginger root
2 bay leaves
1/2 tablespoon black peppercorns
DIRECTIONS
Combine the chicken, soy sauce, vinegar, garlic, ginger, bay leaves and peppercorns in a Dutch oven. Bring to a boil over medium heat. Once it boils, reduce heat to a simmer. Cover the pot and simmer for 30 minutes, basting the chicken occasionally. After 30 minutes, remove lid and cook until liquid has reduced to half.
Remove chicken from the pot to a serving plate. Strain the liquid from the pot to remove all the food particles, and set aside. Serve chicken hot over steamed rice and drizzle with reserved sauce.

Chicken Pasta
INGREDIENTS
3 cups mostaccioli (I use penne)
3 skinless, boneless chicken breast halves
1/4 onion, chopped
3 fresh mushrooms, sliced
2 tablespoons Italian seasoning
1 (14.5 ounce) can diced tomatoes
salt and pepper to taste
2 tablespoons grated Parmesan cheese
DIRECTIONS
Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and reserve.
Meanwhile, in a large lightly greased skillet over medium heat, cook chicken for about 15 minutes and remove from pan; cool and dice.
In a large skillet over medium heat, combine onion, mushrooms, Italian seasoning, tomatoes with juice, salt and pepper; cook until onions are translucent. Remove from heat and add chicken and pasta. Sprinkle Parmesan cheese on top; serve.

chicken with creamy mushroom sauce:

Ingredients
6 Chicken Breasts ,bones and skin removed
1 cup Mushrooms
3/4 cup Flour
1 cup Double Cream , or sour cream
1 tbsp Butter
Salt
White Pepper
1 tbsp Chives , or parsley, chopped
2 tbsp Oil

Directions
Cut thick breasts in half lengthwise. Dip chicken breasts in flour and coat well.
In a large skillet, heat oil over medium heat. Add chicken and pan-fry until golden. Drain on kitchen paper. Put on a serving platter.
In anthor skillet, melt butter over medium heat. Add mushrooms and stir for 2 minutes. Remove and set aside.
In the same dish, add cream, salt and white pepper. Bring to boil and leave until sauce thickens.
Add mushrooms and stir. Pour sauce over chicken in platter. Sprinkle chopped chives or parsley on surface for garnish. Serve immediately.


Teriyaki sandwihiches
1. /2 cup vegetable oil
2. 1/4 cup soy sauce
3. 3 tablespoons honey
4. 2 tablespoons white wine vinegar
5. 1 teaspoon ground ginger
6. 3/4 teaspoon garlic powder
7. 4 (6 ounce) boneless, skinless chicken breast halves
8. 4 hard rolls or croissants
9. 1 cup finely shredded lettuce
10. 8 tomato slices
11. 4 green pepper rings
12. 1/4 cup mayonnaise (optional)

2. Cooking Directions
1. Combine the first six ingredients in a blender; process for 30 seconds. Reserve 1/4 cup. Pour remaining sauce into a large resealable plastic bag. Add chicken; seal and refrigerate overnight. Drain, discarding marinade. Broil chicken 4 in. from the heat for 5 minutes per side or until juices run clear. On bottom half of each roll or croissant, layer lettuce, tomatoes, chicken and green pepper. Drizzle with reserved sauce; spread with mayonnaise if desired. Top with other half of roll or croissant

Chicken or Turkey Croquettes

Cooking time: 15-20 Minutes


Ingredients :

2 tablespoons margarine
1 tablespoon flour
1 cup milk
1-3/4 cups minced chicken or turkey
Salt and pepper to taste
1/4 teaspoon celery salt
1 teaspoon lemon juice or Realemon
1 teaspoon minced onion
1 teaspoon chopped parsley
Bread crumbs
1 egg, beaten

Method :

1-Melt 2 tablespoons margarine in a saucepan and add 1 tablespoon flour; blend.
2-Add 1 cup milk and cook until thickened. To the sauce add chicken, seasonings, onion and parsley.
3-Cool and shape into balls. Roll in fine crumbs, then in egg and again in crumbs.
4-Fry in deep 3 to 5 minutes. Drain.

chicken tikka(pakistani dish your husband will like it):
1/2 lb Chicken breast -- boned & skinned
Salt -- to taste
1 tbsp Chilli powder
1 tsp Coriander seeds, ground
2 lemons Lime juice
2 Garlic cloves, crushed
Ginger, fresh -- grated
2 tbsp Oil
2/3 cup Yogurt, plain

Method:
Rinse chicken, pat dry with paper towels and cut into 3/4-ich cubes. Thread onto short skewers. Put skewered chicken into a shallow non-metal dish. In a small bowl, mix together yogurt, ginger, garlic, chilli powder, coriander, salt, lime juice and oil. Pour over skewered chicken and turn to coat completely in marinade. Cover and refrigerate 6 hours or overnight to allow chicken to absorb flavors.

Heat grill. Place skewered chicken on grill rack and cook 5 to 7 minutes, turning skewers and basting occasionally with any remaining marinade. Serve hot


tandoori chicken (pakistani recipe your husband will sure like it, marinate and keep and ready to cook):

Ingredients :
3/4 cup yogurt (plain)
1/2 cup olive oil
1/4 cup vinegar
1 ozs ginger
8 cloves garlic
2 tbsp cumin powder
2 tbsp coriander powder
1/2 tsp cloves
2 tsp cayenne pepper
1 tsp ground black pepper
1/2 tsp salt
1 whole chicken (cut into pieces)

Method:
1-Combine all ingredients (except chicken) in a blender or food processor, & liquefy.
2-Slash the chicken pieces with a knife and pierce with a folk.
3-Pour sauce over chicken.
4-Marinate at least for an hour, or overnight in the refrigerator.
5-Bring to room temperature before cooking.
6-tandoori chicken is barbecued on a charcoal grill.
if you don't want to fire up your outdoor grill, you can also bake the chicken in your kitchen oven.
7-Remember to baste the chicken with butter often to prevent it from drying.
