Are you going going to elminate the Easter holiday as now who knows what is politically correct regarding the holiday.
If you wanted to use the holiday you might want to make cutout easter eggs and baskets then the children could color the eggs their way and glue them in the basket.

What fun!
You didn't mention if you'll have the children for the day or just for a project.
Since spring is upon us now, how about doing a butterfly project, spring flowers, bunnies, something having to do with spring?
I have so many ideas, but am not sure what your limitations are i.e. money, supplies, time, etc. Try the link I have listed below and see what sounds like it will fit your needs. I started out teaching preschool at the age of 16 and then moved on to own my school...boy how I miss the little ones!
Have fun and if it starts getting rough, just sing your directions to them:
"We're going to sit down, we're going to sit down, hi ho and did ya know, we're going to sit down."
"We're going to use inside voices (then quiet your singing voice), we're going to use inside voices, hi ho and did ya know..." you get the idea ;-) Use their names, also: "I like the way Johnny is sitting, I like the way Mary is sitting..." they will soon all be sitting just to hear their name called.

It is almost Easter, why not have them colour eggs. At this age you cannot assume that they can handle scissors and you probably don't want them to have glue. Paint is fun if you have the right kind and lots of help. They also need to know in advance to bring a paint shirt. I always liked: enchantedlearning.com when my grand-kids were little. They always had things to print that were easy to colour.

You could read them a story about hens,
have them color some eggs.
Gross motor you could find a song about farm animals and have them put movement to it.
Fine motor you can have them try to pass a plastic egg on a spoon. Or have them decorate a egg cut out with markers, or string.
You can also have them make a rabbit using coffee grounds, and a cottonball. have them dip the rabbit cut out in glue on one side then have them cover it with coffee grounds. then glue on the tail. This also works to make bears.
Read them a story about a circus, have them play a game that has funny movements. They can wear funny hats.
You could have them make elephants from blank CDS. but this takes adult help. You have to cut one cd in half, which you would do beforhand, allow the children to glue the half cds to a whole one have them form the trunk from tin foil, then have them glue on the eyes.
You could have them act out the circus giving them all parts such as elephants lions tigers mabe a bear, a horse, acrobats could try to do summersalts. on a mat. You could set up a balance beam for the tight rope walker.
As far as a farm about the same read a story. Song with farm animal movements. They could make a scare crow from brown paper lunch bags. stuff the bag, secure it onto a long stick. have them glue yellow yarn on the head. Glue on eyes and clothing cut from construction paper let them decorate with buttons and yarn.
Ok Good luck I could go on for hours. I used to get to do this stuff I miss it so much.
