Miami Ribs are ribs that are NOT pork. They are sometimes refereed as Jewish Ribs. The nickname Miami Ribs was tabbed because of the large Jewish population in South Florida. Some times they are lamb, beef or veal ribs. They can be prepared like any other ribs. hope this helps

Being a former chef and having worked in a Kosher operation, they are what most people know a short ribs, they can be either beef or veal, usually braised or roasted with vegetables, some Ultra-Kosher place may called them "flanken".

They range from 1-3" thick, I like to brown them and then add onions, carrots celery and stock, it takes 1 1/2 2 hours to cook them, or in a sauce with tomatos, mushrooms and herbs.
