For something different for Easter you could try Bengali Veggies.
Potato (or sweet potato in this case), cut into 1-inch pieces
Green Beans
1 fresh green chili
1/2 inch piece of ginger, peeled
1/4 cup of plain yogurt
1/4 tsp coriander
1/2 tsp turmeric
1 tbsp ghee
1/4 tsp garam masala
1/2 tsp cumin seeds
1/4 tsp granulated sugar
pinch of ground cloves, ground cinnamon, and ground cardamom
salt and pepper
Bring a large pan of water to boil and add the diced potatoes. Cook for 5 minutes. Add the green beans and cook for 2-3 minutes more. Meanwhile, cut the chilies in half, scrape out the seeds and roughly chop the flesh. Chop the ginger and mix the chili and ginger together in a bowl. Drain the veggies, and the chili and ginger mixture with the yogurt, coriander and turmeric. Season with salt and pepper. Heat the ghee in a large frying pan, add the veggie mixture and cook over high heat for 2 minutes. Stir in the garam masala and cumin and cook for 2 minutes. Stir in sugar, cloves, cinnamon and cardamom and cook for 1 more minute. Serve at once.
It seems complicated, but really isn't. It will be quite different from the usual Easter food, but at least it uses the same veggies. I make this dish quite often and it is tasty!!

If you wash the sweet potatoes and cook them in a 450 degree oven they will come out sweet and delicious! It also saves a ton of calories...
Green beans streamed with a bit of smoked ham or bacon are very good. You can add a bit of olive oil and sauteed onion.

Green Beans-Saute with chopped garlic, onion in olive oil
Sweet Potato- Dice, lightly coat with an olive oil, nutmeg and Cinnamon blend then roast in the oven. You can also fry these put not recommended if you are sauteing the beans.

Just mash the sett potato with olive oil and mixed herbs. Simple and delicious.
Or, cut into cubes cover in olive oil and surropund with garlic cloves and fresh herbs. Roast until brown - Yum!
Steam the beans - Serve em up natural.
Or, make a tomato and green olive sauce to pour over them?

I like to bake my sweet potatoes and eat them like a baked potato, with butter and cinnamon.
Fresh green beans with butter and garlic salt on top.

why not make baked sweet potato's and steam the green bean's with Dill there good add some butter to them and your all set, they'll never want them any other way.
