As a general rule of thumb.
For deer, you are better off with a slug barrel - this is rifled. If you don't want one of these, a standard barrel with a rifled choke will work - its usually a cylinder or improved cylinder constriction.
For turkey, you need to use a tight choke. Full, extra full, or super full will work. You need to pattern your gun with the choke and several turkey loads to see what gives you the best pattern.
I'm not entirely positive about duck hunting, but a modified should be sufficient - modified is middle of the road for choke constrictions.

I assume since you asked about chokes for shotguns then you intend to hunt with shot shells and not slugs.
I recommend a "modified" choke for deer hunting with 00 or 000 shot. I have used a "full" choke for this and it worked ok but they don't normally recommend that tight of a choke on 00 or 000 shot.
I recommend a "full", or "extra full" choke on turkeys and ducks. They hold the pattern tight. I use an "extra full" choke in my Mossberg 835 Ulti-Mag when I go turkey hunting. Heck its already in my shotgun and I am tuning my calls right now....... he he he .

Try using a regular slug barrel for hunting deer. It will make the slug more accurate. Use an extra full choke for turkey. Use a plain full choke for ducks.

DTT89ACE is right. For deer hunting you are better off using a slug. As for duck hunting, the choke you use will depend on the distance of your shot, how well you handle your gun, and what kind of blind you are using. I like an improved modified choke, personally, but to each his own.

For those animals 9 times out of 10 you are going to be making a far shot. So I would get a full choke.
