MEXICAN CASSEROLE
1 16 oz container sour cream
1 8 oz pkg cream cheese
2 eggs
2 cans cream of chicken soup
1 large onion, chopped
1 small can olives, chopped
1 small can chopped green chiles
1 cup cooked chicken, tuna, or turkey, chopped
1 8 oz pkg Monterey Jack or Cheddar cheese, shredded
Mix together sour cream, cream cheese, eggs, cream of chicken soup, chopped onion, olives (optional), green chillies, chicken, tuna or turkey (add more than called for if desired).
Spread mixture evenly in a 9x13 pan glass or earthenware casserole dish.
Top with shredded cheese.
Cover and bake 1 hour 350 degrees. Can be frozen and cooked later or cooked and reheated.
A metal 9x13 pan takes longer to cook than a glass one, so bake it slightly longer if you use a metal pan.
Mixture should be set well when removed from oven

I don't know how fancy you want to make it. How about burritos?
Get some spanish rice, beans if you like them, meat (chicken or steak), whatever other filling (roasted red peppers, etc), and some spicy mayo. Also get some tortillas and shredded cheese.
You'll set up three stations. One to steam the tortilla, one to cook the meat, one to cook the rice.
Start the rice - it takes the longest (25 mins). Slice up the meat and grill or cook it in a pan with spice if you want - sazon or just oil, salt, pepper.
The third pot will have some water with a colander (strainer) or some kind of steamer thing on it.
When the rice is cooked, the meat is cooked, and the other stuff you want to add in is ready, steam up a tortilla for about 30 to 60 seconds.
Remove it and lay down some shredded cheese, rice, meat, spiced mayo, and other additions. Fold it over - the steamed tortilla (if still hot) will stick to itself. Et voila - a burrito. Repeat for other people.
Put whatever you want into the burrito as long as you can still fold it up.

TEQUILA SHRIMP
2 tablespoons olive oil
1 white onion, diced
3 cloves garlic, minced
10 shrimp, peeled, deveined, halved lengthwise
1/4 cup tequila
3 Roma tomatoes, diced
2 limes, juiced
1 tablespoon chopped cilantro
1 avocado, peeled, pitted, diced
Salt and fresh ground black pepper
In a medium saute pan with the olive oil, saute the onions and garlic. When the onions are translucent, add the shrimp and continue to saute for 3 to 4 minutes. Then add the tequila and burn off the alcohol. Add the tomatoes and saute for another 3 to 4 minutes. Add the lime juice when the shrimp is cooked half way. When shrimp is fully cooked, fold in the cilantro and avocado. Season with salt and pepper and serve.

this is what i do for my hubby and he loves it! here is what you need!
sopes de chorizo
2 cups of lettuce sliced
a pack of sopes you will find them at any supermarket they look like little tortilla hollow pies
2 cups of refried beans
1 cup of queso fresco
2 cups of cooked chorizo de puerco
1/2 cup of sour cream
first you put some oil in a pan and heat it trhu then add the sopes and let them cook and heat thru about 3 minutes each.
then get a sope and add some beans, then the chorizo, lettuce, a dollop of sour cream, and at last the queso fresco!
Chicken fajitas
1 1/2 pound of thinly sliced chicken breast
1 red bell pepper
1 green bell pepper
1/2 cup of sliced onion
2 tbs of butter
first cut up the chicken into bite size pieces seasoned them with garlic salt and onion powder or any kind of house seasoning will do. then get a pan and put in the butter let it melt then add the chicken and cook don't cover it. After that sliced up you bell peppers and onion and when chicken is done add the bell peppers and onions and heat for a little bit and turn off the heat and they are done. you could use your rice for a side dish! **** you could also do this with beef like milanesa!

make some tacos!! easy peasy! just take some ground meat, beef or turkey. and cook it with some chopped onions, chili powser, cumin (cominos) and a clove of garlic, salt n pepper. after cooked, simmer till your other ingredients are ready. grate some cheese, lettuce, dice some tomatoes, and get your taco shells ready to scoop the meat into. this is so yummy and simple! for a nice sauce to add a kick, mix sourcream (16oz) with 1cup of salsa. mix thoroughly and dollop in your tacos!

OMG, I made chicken w/ roasted chiles (the kind you make chile rellenos with) and onions w/ sour cream last night and it was sooo good! I seasoned the chicken w/ taco seasoning & garlic salt, oh, and cayenne pepper, then cooked the chicken first (breast, cut in strips), then added the onions & chiles (gutted & destemmed), and lastly the sour cream! Delicioso!
