Live Bream(bluegills) for Flathead catfish, Shrimp or cut up fish(cut bait) for others. Chicken livers also work .
If fishing for channel cats rig one rod with a bobber they dont always feed on the bottom

the best bait is the most natural food source for them........

crawdads
i fish alot in the ohio river and all we use are cut blugill and bluegill heads.............works everytime we go.
check out the link it gives different catfish species and their feeding habits
Feeding Habits - Feeds primarily at night using taste buds in the sensitive barbels and throughout the skin to locate prey. Although they normally feed on the bottom, channels also will feed at the surface and at mid-depth. Major foods are aquatic insects, crayfish, mollusks, crustaceans and fishes. Small channels consume invertebrates, but larger ones may eat fish. Contrary to popular belief, carrion is not their normal food.

You know of course that catfish are scavengers so go from there.....any kind of rotten or smelly stuff generally works good. Some folks like a bloodbait but it sure stinks.

Cut bait I prefer Smelt it is a strong oily fish and most any supermarket has them and they're cheap.
