I have a bunch of banana that are getting too ripe to eat.

Grandma's Banana Bread

INGREDIENTS
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter
3/4 cup brown sugar
2 eggs, beaten
2 1/3 cups mashed overripe bananas

DIRECTIONS
Preheat oven to 350 degrees F.
Lightly grease a 9x5 inch loaf pan.
In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.
Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

Simpy's Banana Bread

This may not be the easiest but its the best tasting. I have tried many recipes over the past 20 years and this one is the best.

Banana Bread
2 cups all purpose flour
11/2 teaspoons baking soda
1/2 teaspoon salt
4 overripe bananas
1 cup sugar
3/4 cup (11/2 sticks) unsalted butter, melted and cooled
2 large eggs
1 teaspoon vanilla extract
1/2 cup pecans, finely chopped (optional)
confectioners sugar, for dusting

preheat oven to 350 degrees and lightly grease or
spray 9 by 5 inch loaf pan or mini muffins pans

In a large bowl, combine the flour, baking soda, and salt; set aside
Mash 2 of the bananas with a fork in a small bowl so they still have
a bit of texture. (or just put all 4 in). with an electric mixer fitted
with a wire whisk, whip the remaining bananas and sugar together
for a good 3 minutes; you want a light and fluffy banana cream.
add the melted butter, eggs, and vanilla; beat well and scrape
down the sides of the bowl. mix in the dry ingredients just until
incorporated; no need to overly blend. fold in the (nuts), and mashed
bananas with a rubber spatula. pour the batter into the prepared
loaf pan. give the pan a good rap on the counter to get any air bubbles out.

bake for about 1 hour and 15 minutes, or until golden brown and
a toothpick inserted into the center of the loaf comes out clean.
don't get nervous if the banana bread develops a crack down the
center of the loaf; that's no mistake, it's typical. rotate the pan
periodically to ensure even browning.

Easy Banana Bread

(6 servings) Printable Version


1 and 1/4 cups flour
2 eggs
1 cup sugar
1/2 teaspoon salt
1 teaspoon baking soda
3 bananas
8 Tablespoons margarine
1/3 cup walnuts (optional)
Cream sugar and margarine, mash the bananas and add to the mixture.

Beat and add the eggs. Slowly add the flour, salt, and baking soda. Pour into a loaf pan.

Bake at 350 F for 30-45 minutes.

1/2 cup butter
1 cup sugar

1 cup mashed bananas
2 cups flour
1 teaspoon baking soda
1/2 cup walnuts
1/4 teaspoon salt
Mix butter and sugar until well blended.
Add remaining ingredients.
Pour into loaf pan.
Bake at 350 degrees for 40-50 minutes or until cake tester comes out clean.
btw those ripe nanas are PERFECT for banana bread!! it will be so moist! good luck1

This was my moms recipe....god rest her soul....

I have several recipes that I have tried

BANANA BREAD (SERVES: 2 loafs)
1 cup-butter
2 cups-sugar
2-eggs
2 teaspoons-water
2 cups-bananas, mashed
1/4 teaspoon-vanilla extract
3 cups-flour
1/2 teaspoon salt
2 teaspoons-baking soda
1 cup-walnuts, chopped

Preheat oven to 350 degrees. Sift together flour, salt and baking soda. Set aside. Melt butter on the stove or in microwave. Mix butter and sugar until well blended.
Add eggs one at a time mixing well after
each addition. Add bananas and vanilla.
Fold in flour mixture and walnuts and blend until all
flour is moist. Grease 2 loaf pans and divide batter equally between pans.Bake for 1 hour or until center of loaf is firm
and toothpick inserted in center comes out clean.


Moist Banana Bread
* 1 C Sour Milk
* 4 Ripe Bananas, mashed
* 4 Eggs
* 4 C Flour
* 1 C Butter
* 1 Tsp Salt
* 2 C Sugar
* 2 Tsp. Lemon Juice
* 2 Tsp. Soda
* 1 Tsp. Baking Powder
Cream sugar and butter very well; add eggs and beat well. Add sour cream with soda; Add bananas. Add dry ingredients and beat well. Add lemon juice, can also add nuts if you like. Bake at 350 for 50-60 min. Bake 3 regular size breads.


Banana Bread
* 1 tsp. baking soda
* 2 eggs
* 1 tsp. vanilla
* 1/4 c. margarine (4 Tbsp.)
* 1 c. very ripe bananas (3 bananas)
* nuts (optional)

* 1 1/2 c. flour
- Mix ingredients. Grease bottom of 1 bread loaf pan.
- Bake at 350 degrees till pick tests done, about an hour. Turn out while hot. Wrap in wax paper.

1 3/4 cups all-purpose flour
1 1/4 teaspoons baking powder
1/2 teaspoon baking soda

1 (3 ounce) package non-instant vanilla pudding mix
2/3 cup white sugar
1/2 cup shortening
2 eggs
2 tablespoons milk
1 1/3 cups mashed ripe banana
1/3 cup chopped walnuts


Directions:
1. In a small bowl, sift together flour, baking powder, baking soda, salt and vanilla pudding mix. In a large mixing bowl, beat sugar and shortening until light, scraping sides of the bowl often. Add the eggs one at a time, beating smooth after each addition. Mix in the milk.
2. Add flour mixture and mashed bananas alternately to creamed mixture, beating until smooth after each addition. Fold in nuts if desired. Pour batter into a lightly greased 8x4 inch loaf pan.
3. Bake in a cold, (non-preheated) oven set to 350 degrees F (175 degrees C). Bake for 50 minutes, then cover with foil to prevent burning and bake for additional 10 to 20 minutes or until toothpick inserted into the crown comes out clean. Leave in pan for 10 minutes, then remove from pan and cool.

EASY BANANA BREAD

3 bananas, well mashed
1 c. sugar
2 eggs, beaten
1/2 c. vegetable oil
2 c. flour (1 c. can be whole wheat)
1 tsp. baking soda
1/2 tsp. salt

Preheat oven to 350 degrees. Mash bananas in mixing bowl. Add sugar, eggs and oil, mixing well each time. Sift dry ingredients together and add to banana mixture. Pour in greased 5x9 loaf pan and bake 55-60 minutes.

Easy Banana Bread - chocolate nut:

2 1/2 cups sugar (500 gms)
1 cup butter, softened (228 gms)
4 large eggs (200 gms)
3 cups mashed ripe bananas (660 gms - approximately 6)
1 cup whole milk (236 gms)
2 teaspoons vanilla
5 cups flour (700 gms)
2 teaspoons baking soda
2 teaspoons salt
1-2 cup chopped walnuts (120-240 gms) (optional)
1 (12 ounce) bag semi-sweet chocolate chips (340 gms) (optional)

1. Move your oven rack so that the top of the loaf will be in the center of the oven. Heat the oven to 350ºF. Grease three loaf pans with with shortening. Line with parchement if desired.
2. Cream sugar and butter in a large bowl unitl light and fluffy.
3. Stir in eggs until blended.
4. Add bananas, milk, and vanilla. Beat until smooth.
5. Mix remaining dry ingredients in ziplock bag and gently combine with banana mix Stir in nuts and/or chocolate.
6. Divide into 3 pans (about 1000 gms per pan). Bake for 1 ¼ hours (until toothpick inserted into the cener comes out clean).
7. Cool 5 minutes on wire rack still in pan. Then remove from pan and place top side up. Cool completely before slicing. Wrap tightly and store a room temperature for 4 days or in the refrigerator for up to 10 days.
