GREAT DEPRESSION CAKE
2 c. sugar
1 c. black coffee
2 c. raisins
1 apple, peeled & grated
1 stick butter
2 c. flour
1 tsp. baking soda
2 tsp. baking powder
1 c. chopped walnuts
1 tsp. each cinnamon, ground cloves, allspice & nutmeg
Bring raisins to boil and rinse. In large saucepan simmer first five ingredients 10 minutes. Cool 10 minutes. Blend together other ingredients and stir into wet ingredients. Pour into well greased and floured 13"x9" pan. Bake at 350 degrees for 25 to 30 minutes or until toothpick comes out clean when inserted in middle. Better second day. Very moist cake and needs no icing.

2 cups sugar
2 cups strong coffee (or water, whichever you prefer)
1/2 cup shortening
2 cups Sun-Maid Natural Raisins
1 peeled and grated apple
2 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons baking powder
1 teaspoon ground cinnamon
1 teaspoon ground allspice
1 teaspoon ground cloves
1 teaspoon ground nutmeg
1 cup chopped nuts
Directions:
SIMMER together the sugar, coffee, shortening, raisins, and grated apple for 10 minutes in a medium saucepan, stirring occasionally.
COOL for 10 more minutes.
BLEND together the remaining dry ingredients and stir into the saucepan mixture.
POUR batter into well-greased and floured 13"x9" pan.
BAKE at 350 F for 25 to 30 minutes, or until toothpick inserted in center comes out clean.
COOL and dust with powdered sugar if desired.

DIRECTIONS
In a saucepan combine the shortening, water, raisins, cinnamon, nutmeg, allspice, cloves and sugar. Simmer for 10 minutes. Remove form heat and let stand until cool.
Preheat oven to 350 degrees F (175 degrees C). Grease one 9x13 inch baking pan.
Stir the flour and baking soda into the cooled raisin mixture and mix until just combined. Pour batter into the prepared pan.
Bake at 350 degrees F (175 degrees C) for 45 minutes.

Baked Brie with Zesty Raisins
Ingredients
2 (4-1/2 oz. each) wedges or rounds Brie cheese
2 tablespoons orange juice
1 tablespoon lemon juice
3/4 cup Sun-Maid Golden Raisins
or Sun-Maid Natural Raisins
1 tablespoon packed brown sugar
2 tablespoons finely shredded orange peel
Directions :
CUT Brie wedges in half horizontally. Set aside.
HEAT juices just to boiling in a saucepan.
REMOVE from heat.
STIR in raisins.
COVER and let stand 10 minutes. Drain.
STIR in sugar and peel.
SPOON half of mixture on bottom of Brie wedges, place wedge on top.
COVER with remaining raisin mixture.
WRAP individually and chill for a minimum of 2 hours or up to 3 days.
To serve, BAKE uncovered at 400 F for 8 to10 minutes or until Brie is warm and slightly softened.
SERVE with crackers.
Old-Fashioned Raisin Pie
A country fair winning recipe from years ago.
Ingredients
2 cups Sun-Maid Natural Raisins
2 cups water
1/2 cup packed brown sugar
2 tablespoons cornstarch
1/2 teaspoon cinnamon
1/4 teaspoon salt
1 tablespoon vinegar
1 tablespoon butter or margarine
1 double unbaked pie crust
Directions:
COMBINE raisins and water and boil for 5 minutes.
BLEND sugar, cornstarch, cinnamon and salt.
ADD to raisin liquid and cook, stirring until clear.
REMOVE from heat.
STIR in vinegar and butter/margarine. Cool slightly. Turn into pastry-lined pan.
COVER with top pastry or lattice strips.
BAKE at 425 F about 30 minutes or until crust is golden brown.
