They dont make them hollow... Most pita breads are baked at high temperatures (700°F or 370°C), causing the flattened rounds of dough to puff up dramatically. When removed from the oven the layers of baked dough remain separated inside the deflated pita, which allows the bread to be opened into pockets, creating a space for use in various dishes.

Pita bread is unleavened bread. There's no yeast in it so it does not rise. Baking soda (Sodium Bicarbonate) is what is used instead and the carbonate causes a lot of air within the bread as it bakes. Its a lot like a baking soda biscuit that peels apart in layers the same way. It's also a lot like a saltine cracker which is also unleavened bread. They too have air pockets inside. If you made a giant cracker it would have a pocket inside as well.

It is two pieces with the edges crimped, leaving the centre unattached.
i love pitta! I take my sandwiches to work every day and
I use pitta rather than normal bread!

they don't really. It is two thin pieces of dough stacked. Then they crimp the edges like a pie crust. So technically it's not hollow.

there is different types you can buy. if you want the ones like you can stuff, just look at the package, you'll see some come w/ like perforated edges--just like paper. Theyll say like sandwich or something youll see. They'll be by the deli section with like the rolls & stuff. Then stuff away!
