I think there were other bigger things that were going on with Jesus like healing the sick, praying, etc, etc than keeping a journal.

Dear Diary,
It's me J.C. I love you! I can't believe what a dick judas is being and thomas called me a liar today. Oh well, at least I have you. For my birthday I hope i get a new Bratz doll and some stickers and some rollerblades. OMG! gotta go. My dad is such a jerk and wants me to do the dishes.

probably because He was too busy teaching and healing people. He had quite a reputation, He most likely didn't get a lot of downtime. And quite possibly, He didn't have education and couldn't write.
