Whats the difference between a host, waiter, busboy, matrie, and a runner?

A Waiter takes orders, serves food/drinks

A busboy clears the dishes, but may also fill water glasses, bring bread/chips, and wrap up left overs

A runner brings food from the Kitchen to the table

a Maitre D kind of runs the front of the house. They may be management level.

Front-

Matrie'd (high end spots)- organize the seating, the staff and is often the personal contact for the place, THE FRONT person and the normally the "floor manager".

Host- handles only the front end-before the food is served. Mostly just menus, seating of customers.

BACK-
Bus Boy- serves water, cleans tables "buses" the cart around and does all the dirty jobs. Keep all the pitchers full of liquid, keep the coffee full at the wait stations. (often tipped by waiter)
Dishwashers- sometimes double as busboys to pick up the plates and turn them over faster.

Runners- they only run "food" and drinks to tables. Often they are another junior or training waiter, host (if floor is busy) and management. They must know the table and ticket layout to do it.


FLOOR- The main person on the floor!
Waiter- Handles all drinks, food and ticket/table related items.
Primary server and recives the highest tips from customers.
A good waiter will have a good busboy to back them up. The key is treat them well and respect/ appreciate them.

Study highend waitstaff at old established steak houses. Often these men have been there for twenty years. It is a "craft" to be a good waiter/ server. You must be organized.
Fast is not always the best way, the best way is the right way.
