This very much depends upon the dish which you are cooking. For example, there are a great many seasons in Haggis. However, to take full advantage of these seasons, it is very important to bear in mind that the Haggis hunting season is very short-lived - I think it's from early January until about the end of February. Hill side or mountain Haggis are the best seasons.

1. Winter (snow or sideways rain)
2. Spring (sideways rain)
3. Summer (straight down rain)
4. Autumn (sideways rain)

We have four seasons, spring is this nicest in my opinion, when it starts to warm up a little. Despite the commone opinion that it is always cold in Scotland, we do get hot weather in the summer most years. In winter it can be very cold, wet and windy.

Four of course.
Winters are shrinking all the time here due to global warming which extends spring and autumn. And in the long summer days there's still daylight after 11.30pm.
