. . . . you know like you can buy in the sachets? I know to add finely chopped peppers and peas, but what makes the taste and colour?

We all like it but I was horrified when I read the list of ingredients!

The colour is usually obtained by adding saffron to the rice during cooking. Saffron is very expensive so most cooks use Turmeric/Haldi instead. You can buy this at your nearest Indian food shop or get it from your supermarket. About half a teaspoon of Turmeric will turn the rice yellow - too much and it makes the rice dark yellow to something approaching red/brown.

To use regular rice the only thing I know make it yellow are saffron, tumeric or curry. Sometimes it's made with Basmati rice.
