Pick bones of the rest of the meat, shred chicken, add mayonnaise. Makes great chicken salad.

This is what I do with my leftovers:
Serves 4

200 g chicken meat
1 small yellow onion, chopped
1 clove garlic, chopped
oil
1 green sweet paprika
1 tablespoon flour
1 ½ tablespoon tomato purée
1/2 teaspoon coriander powder
1/2 teaspoon caraway powder
1/2 teaspoon ginger powder
1/2 teaspoon cardamon powder
some grated nutmeg
some chili powder
2 dl chicken stock
2 dl yoghourt
1/2 teaspoon brown sugar
salt, black pepper
parsley, chopped

Cut chicken meat and paprika into pieces
Heat the oil in a sauce pan.
Add onion and garlic, fry until golden brown.
Fry the chicken meat and paprika with onion.
Add flour, tomato purée and all spices, stirring.
Add chicken stock.
Simmer for about 3 - 5 minutes.
Add yoghourt, stirring. Don´t boil!
Salt, pepper and brown sugar to taste.

Serve over fresh cooked pasta, adding the parsley.

Leftover Roast Chicken Soup

INGREDIENTS
1 leftover roast chicken frame - bones, giblets, etc
1 teaspoon whole black peppercorns
2 bay leaf
2 large carrots, chopped
1 large onion, diced
1 cup chopped fresh green beans
4 large potatoes, diced
salt and pepper to taste
DIRECTIONS
In a large stock pot place chicken frame, bones, giblets etc. Add enough water to cover chicken frame and gently simmer for 90 minutes, covered.
Remove all bones and chicken frame, but leave any chicken pieces in the soup. Add peppercorns, bay leaves, carrots, onions, green beans and potatoes. Add enough water to ensure that all the vegetables are covered. Cover and simmer gently until the vegetables are soft.
Season to taste with salt and pepper and serve.

Well I live in Pennsylvania Dutch Country and here everyone likes to eat Chicken Corn Noodle Soup.

Pick your chicken off the bones. Add to broth with celery and onions, maybe a few small diced carrots. When vegetables are just about tender, add noodles to cook. When noodles are tender add a can of drained whole kernel corn to recipe. You may need to add a little chicken base, to your tasting.

Finally ENJOY!!!

Make pulled chicken sandwiches. By pulling the extra meat off the carcass and placing it on a slice of bread, adding a slice of tomato, some low-fat mozzarela cheese and a few leaves of baby spinach. Top with another slice of bread & grill it. You can use and indoor grill (foreman) an toaster oven or a pan just like you would make a grilled cheese... you could also eat it cold. Either way its healthy and delicious!

Pick the chicken off the bones, add your favorite seasoning and use a little mayonnaise to stir in the chicken into it and make a chicken salad.

Chicken Wraps

Soft tortillas
lettuce
tomatoes
onions/green onions
green peppers
cheese
chicken

Put all ingredients in a soft tortilla, then drizzle with salsa or ranch dressing! It is delicious, healthy and kids love it too!

chicken tacos: taco shells, can of re-fried beans, leftover meat browned in a pan with the beans, olive oil and some taco seasoning (comes in a package) then on the table: shredded lettuce, chopped, tomatoes, grated cheese, salsa, olives, cilantro, avocado.

You don't have to have all those ingredients but you put the chicken in the shells with some re-fried beans on top and let the family take their own toppings.

Cut chicken up and stiry fry with some veggies using Canola or olive oil (very Little)

Sautee onions, mushrooms, green & red or yellow bell pepper, garlic in fry pan with evo add a can of tomato sauce or a can of crushed tomatos in fry pan heat till cooked add chicken & heat through
