Lots of oil in those croutons and cheese so it soaks up moisture in the air.

Because the moisture content of the food starts to equalize with the moisture content of the air.

Croutons have been baked to remove all moisture, so they absorb humidity when left out. Bread has more moisture than the surrounding air, so it begins to dry out.
