Hush Puppies
Ingredients
1 cup cornmeal
1/2 cup all-purpose flour
1/2 cup corn flour, available at health food stores
1 tablespoon baking powder
3/4 teaspoon ground red pepper, preferably cayenne
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried thyme leaves
1/4 teaspoon white pepper
1/8 teaspoon dried oregano leaves
Other Ingredients:
1/4 cup green onions, tops only, very finely chopped
1-1/2 teaspoons garlic, minced
2 eggs, beaten
1 cup milk
2 tablespoons pork lard, unsalted butter, vegetable oil, chicken fat or bacon drippings
Vegetable oil for deep frying
Instructions
Combine all the dry ingredients in a large bowl, breaking up any lumps. Stir in the green onions and garlic. Add the eggs and blend well.
In a small saucepan bring the milk and lard (or other fat) to a boil; remove from heat and add to flour mixture, half at a time, stirring well after each addition. Refrigerate 1 hour.
In a large skillet or deep fryer, heat 4 inches of oil to 350 degrees F. Drop the batter by tablespoonfuls into the hot oil. Do not crowd. Cook until dark golden brown on each side and cooked through, about 1 minute per side. Drain on paper towels.
Yield: 5 servings

Hush Puppies
INGREDIENTS
2 quarts vegetable oil for frying
3 cups cornmeal
2 teaspoons baking powder
1 1/2 teaspoons salt
1 1/2 cups milk
1/2 cup water
1 egg, beaten
1 small onion, minced
DIRECTIONS
Heat vegetable oil to 365 degrees F (185 degrees C).
In a large mixing bowl, combine corn meal, baking powder, salt, milk, and water. Mix in egg and chopped onion.
Shape the batter into small balls, approximately 1 tablespoon each.
Use a long handled spoon to gently slide the hush puppies into the hot oil. Cook 8 or 10 at a time, until golden brown. Remove from the oil with a slotted spoon, and roll on paper towels to briefly drain. Serve hot.

To serve: In a deep skillet, heat 1 1/2 inches of vegetable oil to 350F. In a medium bowl, combine mix with 1 1/2 cups buttermilk and 1 beaten egg. Stir until well blended. Drop mixture by spoonfuls into hot oil. Fry until golden brown and thoroughly cooked through. Drain on paper towels and serve.
This recipe for Hush Puppy Mix serves/makes 2.5 cups

These delectable little balls of fried seasoned cornbread are incredibly addictive. Be careful; it's easy to fill up on these!
2 cups yellow corn meal
2 tablespoons flour
2 teaspoons baking powder
1 tablespoon sugar
2 teaspoons salt
1/4 cup finely chopped onions
Freshly ground black pepper to taste
Boiling water
1 egg, beaten
1/4 cup milk
Oil for frying
Heat oil in deep skillet or fryer to 375°F.
Mix all dry ingredients except the baking powder. Pour in enough hot water to make a thick mush, making sure all ingredients are moistened. Add milk, egg and baking powder and mix thoroughly.
Drop by spoonfuls (or use a small ice cream scoop) into oil, and fry until golden brown.
Marvelous with fish or shellfish. Fried catfish and hush puppies are a particularly classic combination.

I love hush puppies! This recipe is from Emeril Lagasse:
Jalapeno Hush Puppies:
1 1/2 cups yellow cornmeal
1/2 cup flour
1 teaspoon baking powder
1 teaspoon salt
1 teaspoons hot sauce
1/4 cup minced onions
2 fresh jalapenos, minced
2 eggs, beaten
1/2 cup milk
Preheat the fryer. In a mixing bowl, combine the cornmeal, flour, baking powder, salt, hot sauce, onions, and jalapenos, together. Stir in the eggs and milk. Mix until fully incorporated. Fry 1 tablespoon of the batter at a time. Fry the hushpuppies for 2 to 3 minutes or until they are golden brown. Stirring constantly will ensure over-all browning. Remove from the oil and drain on a paper-lined plate.

my Mom Use to take an iron skillet and put it half way full of corn oil or crisco and get it hot. She would boil water and take 2 or 3 cups of cornmeal (usually yellow) with some salt in it. She would pour the boiling water into the corn meal to make a thick mush. She would them put her hands under cold water and fashion each cake or pone while the mush was hot. She would fry them on a medium heat turning them often. They have to cook a fairly long time. They are pure heaven. I learned how to make them but I am the only one in the family that knows how and sometimes I fail with them. Mom's always turned out right. I cannot tell you how good this simple dish is with red beans and rice and greens and other soul type country Southern foods. You split the pone open and butter both sides.

I really like the rhythm, it moves along quickly and then pulls to a halt between each stanza with 'hush'. My one critique would be the rhyming, neither 'wish' nor 'trust' fit the 'ush' rhyme. You could either change the first stanza so that none of it rhymes (except for the 2nd line of each stanza), or change the 2nd and 3rd stanzas so that they fit the pattern. If you can't think of any more rhyming words that you like, perhaps you could bring 'hush' into each stanza, giving it a different adjective each time. If you choose to do this I would reccommend using it in the same line of each stanza. Off the top of my head, all the words I can think of that rhyme with 'hush': blush mush gush lush EDIT Ok I just read Jon M ǝpısdn uʍop sı unɟ's post about the degrading rhyme and I didn't get that the first time I read it but that's really cool, so just ignore me :)
