How do I make a basic lasagne?
I had a lasagne once where they didn't use the white kind of cheese INSIDE,but there was some kind of WHITE SAUCE/GRAVY inside INSTEAD.

I don't know it was a basic/regular white gravy or a other kind of white gravy....
All I know that it was waaaaaaaay better than the average lasagne with the white kind of cheese inside.

I know this was not your original question but Beau monde is a seasoning that consist of salt, onion and celery seed

The white sauce is just that you make a sauce of 3 or 4 tablespoons all purpose flour in 1 stick melted butter with salt and pepper - be sure the butter soaks up all the flour and there is no white left add 1/2 cup water or chicken broth and bring to a rapid boil. Then add 2 cups milk with 1 cup heavy cream turn to medium low heat. Keep stirring on medium low heat until it thickens and you have cream sauce. You can use this on lasagna or any pasta.

3/4 c. butter
7 1/2 tbsp. flour
2 c. milk
1 1/2 c. heavy cream
1 c. reserved broth
1/2 tsp. rosemary
1/2 tsp. tarragon
1/2 tsp. Beau Monde
1/2 tsp. salt
1 dash nutmeg
1 1/2 c. grated Parmesan cheese

In large sauce pan melt butter. Blend in flour and cook, stirring constantly over medium heat for 3 minutes. Add milk, cream and reserved broth, stirring constantly until mixture boils and begins to thicken. Add seasonings. Remove from heat and stir in cheese.

What you tasted was a besciamel, it's basically a thickened milk..you can start off with cooking some onion in butter for couple minutes, add some flour and stir well when it comes together you add the milk and let it cook untill it thickens, then you caan add what you want...pick a cheese or any kind of spice.

I've always made it as a basic cheese sauce. 1oz butter, melted in pan, add 1oz plain flour with salt and pepper (and a small pinch of English mustard if liked), allow to just bubble on a low heat, add half pint of milk, very very slowly. Bring to boil and when thickened add loads of cheese. Use in layers in your lasagne. Enjoy.

It was probably a basic white sauce. It is made by melting a couple of tablespoons of butter in a saucepan. then add a couple tablespoons of flour and stir until it is hot and bubbly but not brown. Add about 2 cups of milk and whisk constantly until it boils and thickens. Season with salt, pepper and any herbs that you like. My husband likes a bit of curry, my grandmother used parsley....it is pretty versatile that way.

Chicken Lasagna

INGREDIENTS:
2 1/2 cups cooked chicken, in large chunks
1 cups chicken broth
1/2 cup milk or half-and-half
1 large can (28 ounces) plum tomatoes
2 cloves garlic, minced
1 bay leaf
pinch ground thyme
dash cayenne pepper
3 tablespoons olive oil
1/2 teaspoon sugar
salt
8 ounces lasagna noodles
3 tablespoons all-purpose flour
pepper
1/4 cup chopped fresh parsley
8 ounces shredded mozzarella cheese
1/2 cup grated Parmesan cheese

PREPARATION:
In saucepan, combine tomatoes, garlic, bay leaf, thyme, cayenne pepper, olive oil, sugar, and 1/2 teaspoon salt. Bring to a boil; reduce heat, cover, and simmer for 20 minutes. Cook lasagna noodles in boiling salted water for about 10 minutes, or until just tender. Drain and run cold water over them to stop the cooking; pat dry.
In a cup, stir a few tablespoons of cold water into the 3 tablespoons flour. Stir until a smooth paste forms. Place chicken broth and milk in a saucepan and heat. Add flour mixture to the liquid; add salt and pepper to taste, then stir in parsley. Continue to cook, stirring, until mixture is thickened and bubbling.
Pour a thin layer of tomato mixture into a large 13x9x2-inch baking dish. Top with a layer of lasagna noodles placed side-by-side. Add a layer of chicken; sprinkle some of the mozzarella cheese over chicken. Top with a layer of chicken broth white sauce. Add another layer of lasagna, more tomato sauce, another layer of chicken, mozzarella cheese, and white sauce; repeat until all ingredients are used or dish is full, finishing with a layer of lasagna noodles. Sprinkle chicken lasagna with the grated Parmesan cheese. Bake chicken lasagna at 375° for 25 to 35 minutes, or until browned and bubbly.
