I am looking to expand my cooking experience and I was wondering what are some good dishes you have. I can cook pretty well now but I cook a limited amount of food. I need some things that will spice up my kitchen . Thanks

Cuban Picadillo Recipe with Ground Beef

INGREDIENTS:
1 pound ground beef
1 teaspoon oregano
1 teaspoon cumin
4 cloves garlic
1 medium white onion (chopped fine)

1 small green pepper (chopped)
1/2 cup beef stock
3/4 cup tomato sauce
2 small potatoes (peeled and diced)
8 to 10 green olives (pitted)
salt and pepper to taste
olive oil for sautéing

PREPARATION:
1. In a mixing bowl, combine the ground beef, oregano, cumin, salt and pepper.
2. In a fruing pan, heat the olive oil. Sauté the onions, green pepper, and garlic until soft.

3. Add the ground beef mixture, beef stock, and tomato sauce
Cover and cook over medium-low heat for 15 minutes.
4. Add the diced potato. Cover and cook another 15 minutes, or until the potatoes are done.

5. Remove the cover. Add the olives and cook uncovered 15 minutes or until the liquid is fully evaporated, but the meat is still moist.


Fried Chicken

INGREDIENTS:
2 1/2 pounds boneless chicken strips (breasts, thighs or mixed)
Marinade:
1 cup lime juice
4 tablespoons soy sauce
2 tablespoons Worcestershire sauce
4 cloves garlic (minced)
Seasoned Flour Coating:
2 cups flour
2 teaspoons Spanish paprika
1 1/2 teaspoons black pepper (or to taste)
1 teaspoon salt (or to taste)
Vegetable oil for frying

PREPARATION:
1. Combine marinade ingredients in a large plastic bowl or zipper bag. Add chicken and marinate for 30 minutes or up to 3 hours.
2. Combine flour, Spanish paprika, pepper and salt in a separate plastic bowl or zipper bag.

3.Coat the marinated chicken with the seasoned flour mixture.

4.Place vegetable oil for frying into a deep frying pan, or use a deep fryer
Heat the oil over medium-high heat to 360 degrees Fahrenheit.
5. Fry chicken in batches, until golden brown outside and completely cooked inside (about 4 minutes per side).

6. Place chicken on a plate lined with a paper towel to absorb oil. Keep warm until ready to serve.

Serves: Makes 4 to 6 servings
Heat the oil over medium-high heat to 360 degrees Fahrenheit.
5. Fry chicken in batches, until golden brown outside and completely cooked inside (about 4 minutes per side).

6. Place chicken on a plate lined with a paper towel to absorb oil. Keep warm until ready to serve.

Double Pineapple Upside-Down Cake

INGREDIENTS:
6 tablespoons butter
1 cup brown sugar, packed
20 ounce can pineapple slices
marachino cherries
1 yellow cake mix
3 eggs
1/3 cup vegetable oil or melted and cooled butter
20 ounce can crushed pineapple


PREPARATION:
Preheat oven to 350 degrees F. Melt 6 tablespoons butter in 9 x 13 pan in oven. Remove pan from oven and sprinkle bottom with brown sugar. Decoratively arrange pineapple slices. Fill in spaces with cherries.In a bowl, combine cake mix, eggs, oil and crushed pineapple. Mix for 2 minutes. Pour over pineapple slices. Bake for 40 minutes or until done. Remove from oven. Very carefully invert onto serving platter. Serve warm or room temperature topped with whipped cream.

The Joy of Cooking - A to Z basics, American classics and many traditional international dishes. If I can't find it any where else its usually in the Joy. No kitchen should be without it.
Emeril's New New Orleans- Nola cooking with a modern edge. The recipes are reasonably easy and the ingredients not hard to find. I've never been disappointed in any of the dishes and he includes a great selection of sauces.

The Grill Bible by Steve Raichlen- filled with International bbq ideas. The sates are to die for!

When I can't find a recipe I go to food tv, enter the dish and usually quite of a few recipes will come up from easy to advanced.

Well, there are tons of fun recipes you can do with pillsbury dough, like stromboli's and meat roll-ups but foodnetwork is a good website for fun easy recipes even better try www.kraftfoods.com is awesome! I do have to mention that this appetizer recipe is a HUGE hit at every party I go to

Swiss and Bacon dip
8 slices center cut bacon, chopped
8 ounces softened cream cheese
1/2 cup mayonnaise
2 rounded teaspoons prepared Dijon style mustard
1 1/2 cups shredded Swiss cheese, available on dairy aisle
3 scallions, chopped
1/2 cup smoked almonds, coarsely chopped
Baby carrots and a selection of spiced flat breads, cocktail sized pumpernickel or rye breads, or sliced whole grain baguettes, for dipping


Preheat oven to 400 degrees F.
Brown bacon in nonstick skillet over medium high heat. Drain crisp bacon bits on paper towels.

In a mixing bowl, combine cream cheese, mayonnaise, Dijon, Swiss and scallions with cooked bacon. Transfer to a shallow small casserole or baking dish and bake until golden and bubbly at edges, 15 to 18 minutes. Top with chopped smoked almonds. Place dip on a platter and surround warm casserole with breads and carrots for dipping.

my favourite is Honey Mustard Mozzarella Chicken INGREDIENTS four skinless, boneless bird breast halves three/four cup honey a million/two cup ready mustard lemon pepper to style four slices bacon, reduce in part a million cup shredded mozzarella cheese DIRECTIONS Preheat oven to 375 levels F (one hundred ninety levels C). Place the bird breast halves in a baking dish, and drizzle frivolously with honey and mustard. Sprinkle with lemon pepper. Bake bird 25 mins within the preheated oven. Top each and every breast part with two bacon slice halves, and sprinkle frivolously with cheese. Continue baking 10 mins, or till bird juices run transparent, bacon is crisp, and cheese is bubbly.

Here a couple recipes that my family loves:
Chicken Adobo
INGREDIENTS
1 (3 pound) whole chicken, cut into 8 pieces
1/2 cup soy sauce
3/4 cup distilled white vinegar
1 bulb garlic, peeled and crushed
2 tablespoons thinly sliced fresh ginger root
2 bay leaves
1/2 tablespoon black peppercorns
DIRECTIONS
Combine the chicken, soy sauce, vinegar, garlic, ginger, bay leaves and peppercorns in a Dutch oven. Bring to a boil over medium heat. Once it boils, reduce heat to a simmer. Cover the pot and simmer for 30 minutes, basting the chicken occasionally. After 30 minutes, remove lid and cook until liquid has reduced to half.
Remove chicken from the pot to a serving plate. Strain the liquid from the pot to remove all the food particles, and set aside. Serve chicken hot over steamed rice and drizzle with reserved sauce.


Chicken and Stuffing Bake
Ingredients:
1 1/4 cups boiling water
4 tbsp. butter OR margarine, melted
4 cups Pepperidge Farm® Cubed Herb Seasoned Stuffing
6 boneless chicken breast halves
Paprika
1 can (10 3/4 oz.) Campbell's® Condensed Cream of Mushroom Soup OR 98% Fat Free Cream of Mushroom Soup
1/3 cup milk
1 tbsp. chopped fresh parsley OR 1 tsp. dried parsley flakes

Directions:
MIX water and butter. Add stuffing. Mix lightly.
SPOON stuffing along center of 3-qt. shallow baking dish. Arrange chicken on each side of stuffing and sprinkle with paprika.
MIX soup, milk and parsley. Pour over chicken. Cover.
BAKE at 400°F. for 30 min. or until done.


Shrimp Pasta Bake
INGREDIENTS
12 ounces uncooked vermicelli
1 medium green pepper, chopped
5 green onions, chopped
6 garlic cloves, minced
6 tablespoons butter, cubed
2 tablespoons all-purpose flour
2 pounds cooked shrimp, peeled and deveined
1 teaspoon celery salt
1/8 teaspoon pepper
1 pound process cheese (eg. Velveeta), cubed
1 (10 ounce) can diced tomatoes with green chilies, drained
1 (4 ounce) can mushroom stems and pieces, drained
1 tablespoon grated Parmesan cheese
DIRECTIONS
Cook vermicelli according to package directions. Meanwhile, in a large skillet, saute the green pepper, onions and garlic in butter until tender. Gradually stir in flour until blended. Stir in the shrimp, celery salt and pepper; cook, uncovered, over medium heat for 5-6 minutes or until heated through.
In a microwave-safe bowl, combine the process cheese, tomatoes and mushrooms. Microwave, uncovered, on high for 3-4 minutes or until cheese is melted, stirring occasionally. Add to shrimp mixture. Drain vermicelli; stir into skillet.
Pour into a greased 13-in. x 9-in. x 2-in. baking dish. Sprinkle with Parmesan cheese. Bake, uncovered, at 350 degrees F for 25-30 minutes or until heated through
