Parsley Sauce goes extremely well, but it is a matter of choice.

Grilled Salmon with Creamy Tarragon Sauce
INGREDIENTS
1 pound salmon fillet
1 tablespoon olive or canola oil
1 cup plain yogurt
1/4 cup chopped green onions
1 tablespoon minced fresh tarragon
1 tablespoon mayonnaise
2 teaspoons lime juice
1/2 teaspoon hot pepper sauce
DIRECTIONS
Brush salmon on both sides with oil. Coat grill rack with nonstick cooking spray before starting the grill. Place salmon, skin side down, on grill rack. Grill, covered, over medium heat for 20-25 minutes or until fish flakes easily with a fork.
For sauce, combine the remaining ingredients in a small bowl. Serve with the salmon

Baked Salmon with Cream Sauce
1/4 cup cucumbers, peeled, seeded and sliced
1 tablespoon olive oil
1 tablespoon butter
2 (6 to 8 ounce) Salmon fillets, 1" thick
Kosher salt, to taste
freshly cracked black pepper, to taste
1/4 cup dry white wine, (or dry vermouth), divided
juice of 1/4 lemon
1/4 cup heavy cream
salt and pepper
Peel the cucumbers, cut them lengthwise; use the tip of a spoon to remove the seeds running the spoon down the middle of the cucumber. Slice them into 1/4" slices, and set aside.
Preheat oven to 400° degrees F.
In an ovenproof skillet, heat olive oil and butter over medium heat (do not let the butter brown). Season the salmon fillets with salt and pepper, place in the skillet. Sauté 2 minutes per side. Add approximately 2 tablespoons wine to the skillet and place in oven. Bake the salmon 4 to 6 minutes. Remove the baked salmon from skillet and tent with aluminum foil to keep warm. Discard the oil and butter from the skillet and deglaze the skillet with the remaining 2 tablespoons of wine over medium heat. Add the lemon juice, heavy cream and sliced cucumbers until the cream sauce coats the back of a spoon. Season to taste with salt and pepper.
To plate up (serve), divide the cream sauce between two plates and place the baked salmon on the cream sauce.
If desired, serve with asparagus spears steamed al dente.

I like to make a bechamel (sp?) sauce with fresh dill.
Make a roux, which is equal parts butter and flour, I do about 2 Tbsp each. Cook that in the pot for a few minutes, stirring constantly to cook off the flour taste. Don't let it get much darker than a golden color. Then add about 1 1/2- 2 C milk (depending on the thickness of the sauce you like)...just add a bit at a time, mixing well into the roux. There's your basic bechamel.
Add fresh dill to taste, salt & pepper. Simmer for a minute or two. Done!

OMG!! This could possibly be my favorite question so far! I love grilled salmon and I have the PERFECT sauce.
Lemon butter caper sauce
1 fresh lemon squeezed
a bit of the zest
3 tablespoons butter
splash of olive oil
a tablespoon capers ( find them in the italian foods aisle, they're like little green pickled peas but theyre not peas)
tablespoon fresh parsley chopped
salt
pepper
mix all ingrediants in sautee pan for a few minutes on med-low add parsley and pour over salmon
I guarantee you'll love it!

I just grilled some salmon sunday night. I always use an asian type sauce on my salmon....some soy sauce, some honey, some ginger and some sesamie oil. It caramelizes on the grill...its so good!

lemon dill butter usually goes good w/ salmon...it's very easy, soften some butter add lemon juice and some dill, roll it in some saran wrap and freeze it. When the salmon is cooked cut a piece of butter and drop it on top..plus you'll have more ready and last for a while.

I'm not a big fan of salmon, though I love all other fish, but I know it's good for you so I sometimes make wasabi mayo, remoulade sauce or tartar. I've had bechamel and hollandaise on it too.
