Beef in freezer about 1 month. Currently in fridge, defrosting slowly. Intend to fry beef, make up a pot of Bolognese sauce, take 1 portion and then (hopefully, if it's not unsafe) freeze the sauce to be thawed and reheated another day, say within 2 weeks. Is this safe or am I messing with nasty bugs?!!!

It is fine to do this. As long as the beef does not sit out in room temperature for hours in between the cooking and re-freezing phases.

Your cooked bolognese sauce would actually be fine for 3 to 6 months, depending on the container used, and how well it has been protected from freezer burn.

No bugs involved here, you cook when the beef has thawed, from then on it's a cooked dish & nothing more to do with the frozen beef, you wouldn't want to waste what is not eaten & freezing it for later is the right idea.

You are on the right track. Thaw in a microwave if you wish too. Make your sauce and freeze the leftovers. If you put the leftovers in a vacuum pack bak it will keep for up to 6 months.

As long as you cook the meat before you refreeze it will be fine. Sounds yummy too!

That is definitely a safe and very economical thing to do. I do it myself all the time.
