Bicycle crunches. These are more effective than sit-ups or crunches.
Begin by lying on your back, placing your hands behind your ears. Do not put your hands clasped behind your head. Lift your legs in the air and bend your knees so that your legs form a 90 degree angle.
Move your legs in a bicycle motion. When your left knee is closer to your body, reach your right elbow to it. When your right knee is closer to your body, reach your left elbow to it. Try performing the exercise for 60 seconds in 2 sets.
You should also try side crunches. They are the same as crunches except you move both of your legs to one side. The side crunch helps work out your muscles on each side of your stomach.
If you want to flatten your stomach, you have to do cardio too. 30-60 minutes 4-5 times per week.

I'm not a fitness guru, so take this for what it's worth.
I hear that things like belly dancing and the like are good for the abs. I haven't tried it, but I hear it's good. If you have a stability ball, doing crunches on those really challenge the ab muscles much more than lying on the floor to do them.
Just burning fat by doing cardio will flatten the stomach a lot, too, even if you don't concentrate on those muscles while you are excercising.

If you have fat on your stomach you are going to have to do some type of cardio or aerobic exercise to get the gat off. If you are just starting out then do 30 mionutes 3 days a week. Work your way up to doing 45-60 minutes 5-6 days a week. The fat should start coming off.

Crunches will not flatten your stomach. Its a common misconception. Crunches BUILD stomach muscle which makes your stomach bigger. What you need to do to flatten your stomach is reduce your overall body fat %. The stomach is probably the toughest place to lose fat from. Focus on dieting and walking for at least an hour or two everyday. This will burn loads of fat (more than jogging) and help you to flatten your stomach. (also, you can cut down on sodium and carbonated drinks - that will help a bit as well)

Yoga. It's better than other exercies because it starts at the bone and tendon and works itself out to the muscles. And all the exercises are based on 'lifing with your center'.
Classes are pretty cheap and you'll see faster results.
