It doesn't sound balanced enough, but it's way better than what most people eat every day! I heard that too much starch in a diet can lead to pancreatic problems. Try to add more colorful vegetables or fruits for dessert and I think you'd be doing excellent!

vegetable is very good as a lunch but about the rice...it would depend on what kind of rice you eat? Is it white rice because white rice isn't good. Find out the calories of the rice. Chick peas are also great but try not to eat the potatoes. They are a vegetable but aren't the healthiest. It's ok to take potatoes once in awhile...

I think you are ok as long as you get the other nutrients your body needs at the other meals.
