I love the way veg sits nice and neatly on plates in a restuarants....On Sunday, I attempted to do my veg all nice and piled up, evenly cut, etc etc....well, not one of my carrots were the same size......Potatoes, varied in size weight and cooking time..Does anyone have any info of food books which gives basic instructions on how to chop/shape veg professionally, or any web pages dedictated to the art of cutting up veg? Thanks for your help

What about buying one of those vegetable mandolines that you can get from Lakeland? That's how I get all my chips the same size. (Surprise surprise - they cheat!)

Cutting veg up to consistent size takes time, practice, and effort. Resteraunts waste a lot of food as they will reject parts of veg to ensure they can evenly cut up the remainder. They also buy stuff from specialist suppliers that hand pick the right sized items. Us amatures don't have the time or resources to do this, but we do or best. Try www.bbc.co.uk/food as a starting place. Or buy a good food prep guide, look around to find one that you like.

You can use a mandolin to help create even sized pieces, These are available from most cook stores, Try Lakeland Limited for a reasonably priced one.
