Go to Fantasea. It is just north of Patong Beach. It is a fantasy park and buffet hall and live show with Elephants. The show describes the history of Thailand from different parts of the country.

Apart from relaxing try to know the local people by trying their delicious food, simply talk to them, have an elephant ride,do some Scuba-diving/snorkeling on the exceptional islands near-by etc. And don't forget to shop lovely souvenirs for the one's back home!
