I need to know this because im going to make 'Papas rellenas' [Cuban/Puerto Rican Ground-beef Stuffed Potato balls] and I dont want the potato to be breaking apart while im trying to stuff it with the beef and rolling the cracker/flour meal onto it.

I also hear that refrigerating the potato mash will harden it's conistency.[?]

you want a potato with a low starch content. try chef, red or Yukon gold.

We always used white potatoes since you end up having to mash them anyway. Yes, they will get a little harder during the refrigeration point of the recipe. Good luck ^_^ Very very yummy!!!
