I left a bag of potatos in the dark and now a few months later they have think white roots about 1 foot long. What can be done with these potatos? Can I still cook them? Can I plant them as is?

Cut it up at each sprout and bury the sprout(if these sprouts were shorter they are refered to as "eyes"of the potato)doesn't matter they are shoots, bury each one with a chunk of the potato itself attached to it and fertilize and soon you will see green leaves above ground, telltale evidence that the potato's are growing off the shoot under the ground, the potato's are roots of the plant, wait till fall and you will harvest a bunch of potato's attached to each above ground plant!

Plant them and hope they grow. With rootlets that long there will be little or nothing left to the main body of the potato.
