I'm from Memphis and we're famous for meatloaf.3lbs hamberger,0ne large onion,1 large bell pepper,8oz sliced mushrooms,3 cloves of garlic,1 bottle of ketchup,two eggs,2 slices of bread "ripped into little pieces.Three tbl spoons brown sugar.Chop everything up and put on a pair of gloves.Squish it all together and pour 1/2 to 3/4 of the ketchup into the mix.Shape into a meatloaf.After you put it into the pan,over lay bell pepper across the top.Then pour the rest of the ketchup on top and rub it or paint it on.Turn on the oven at 350.Cook for 1:45 min on bake.Then turn the oven on broil for another 10 min and it's ready to serve.

Meatloaf Supreme2 pounds lean ground beef
4 (6 ounce) cans tomato paste
15 ounces dry bread crumbs
4 eggs
3 tablespoons garlic salt
3 tablespoons seasoning salt
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, combine ground beef, tomato paste, bread crumbs, eggs, garlic salt and seasoning salt until well mixed. Shape into a loaf and place in a 9x5 inch loaf pan.
Bake in preheated oven 1 hour, until no longer pink.

This would be great with some mashed potatoes..

Mine is Southwestern-Style Meat Loaf made with

1 pound ground beef, lean
3/4 to 1 pound ground veal
1 egg
1/2 cup fine dry bread crumbs
1 can (approx. 4 1/4 ounces) chopped ripe olives
1 can (4 ounces) chopped mild green chile pepper
1 cup corn kernels
1/2 cup salsa, plus more for topping
1 teaspoon onion powder
1/2 teaspoon garlic powder
1/8 teaspoon pepper
1/4 teaspoon salt, or to taste

PREPARATION:
Combine all ingredients except topping in a bowl and combine until blended. A wire potato masher works well for mixing meatloaf. Pack into a loaf pan and bake at 350° for about 1 hour and 15 minutes

1 1/2 pounds ground beef
1 cup fresh bread crumbs (I use 1/2 cup fresh toasted and 1/2cup seasoned)
1 onion, diced
1 egg, lightly beaten
1 1/2 teaspoons salt
1/2 teaspoon pepper
2 (8-ounce) cans tomato sauce
3 tablespoons vinegar
3 tablespoons brown sugar
2 tablespoons Dijon mustard
2 tablespoons Worcestershire sauce
1/2 cup water, to thin sauce if necessary
Preheat oven to 350 degrees F.
Mix together the beef, bread crumbs, onion, egg, salt, pepper, and 1/2 cup of the tomato sauce. Form this mixture into a loaf and place it in a shallow pan. Stir together the remaining tomato sauce, vinegar, sugar, mustard, Worcestershire and the water (if too thick). Pour this sauce over the meatloaf. Bake for 1 hour, basting every 15 minutes with the pan juices.

mix in a bowl:

* 2 lb turkey ground round (or beef ground round but the turkey is lighter, healthier, less fat and a nice, light flavour)
* 3 big handfuls of cheeze-its (put in a ziploc bag and smash up to small pieces - but not breadcrumb sized). If you don't have cheezeits you can use wheaties or cornflakes but this result in a different texture and consistency meatloaf
* 2 eggs
* 1 small can peas
* 1 medium sized can crushed tomatoes
* 1 small can tomato paste
* Add Italian flavoured breadcrumbs until consistancy is not too wet, not too dry - just nice, moist and you can shape it with your hand.
* small handful dried onion flakes

Form a loaf shape on a baking tray lined with tinfoil and sprayed with Pam (nonstick spray). Rub top of loaf with more tomato paste or tomato ketchup if you have none. Cover with foil loosely (dont tuck under tray lip)

Bake 350 oven for about 1hr - then remove foil and let bake for another 15 mins.

I like this recipe because I don't like to measure things out with measuring cups etc and this has always been a no-fail recipe for me. And I would never have thought of the cheeze-its but they really do add a great flavour!

2 lbs. Ground beef
1 C. Rice
1TBSP. Garlic powder
1TBSP. Onion powder
1TSP. Salt
1TSP. Pepper
1/4 C. Chopped onion (optional)
1/4 C. Chopped green pepper (optional)
1 Egg
1-12oz. Can of stewed Tomatoes (chopped bite-sized) KEEP THE JUICE!!!!
2 Cans of tomato sauce (not spagetti sauce) Or one large can of tomato sauce.

Prep:
Preheat oven to 375.
In a large bowl, take the ground beef, egg, onion (optional), green pepper (optional), salt, onion powder, garlic powder, rice, stewed tomatoes, and half of the drained stewed tomato sauce. Mix with your hands and form a loaf. Put into a glass or metal 13x9 baking pan. Pour the rest of the stewed tomato juice over the loaf, and the tomato sauce. Put in oven uncovered for 45 minutes-an hour. Serve with mashed potatoes, and a veggie. ENJOY!!!

P.S. You can also use this recipe to make the filling for bith stuffed green peppers, and cabbage rolls. Just omit the onion and the green pepper!

Everyone loves my meat loaf...heres how i make it.
put 2 pounds of ground beef in a large mixing bowl, to it add 1 soup can sized can of tomato sauce 1 and a half packs of cracker crumbs from a 4 packof crackers, 2 eggs table spoon of Marjoram, table spoon or Oregano, tablespoon of Basil and a little Thyme some salt and pepper.
Use your fingertips to Knead it a little like you would bread dough. you dont want to thourally combine it cause it will be too dense.
put it into a 9x13 cake pan, spread it out and cover with Hickory Smoke BBQ sauce
Bake at 350 for about an hour.
Try it!! It is sooo yummy

I won't tell you the whole recipe, but I do use half a cup of minute rice, and a half a cup of ground up saltine crackers, and a half a cup of ketchup. The secret after you mold it into a loaf is, put it in a slightly larger Pyrex pan, and add about a half cup of water around the loaf. It will come out very moist. Potatoes and carrots in the water. Top it with ketchup and sliced bell peppers in one quarter inch thick circles before baking.

1½ hours 20 min prep

1 1/2 lbs ground beef (ground shoulder roast is good)
1 slice bread, broken or chopped finely
1 whole fresh egg
1 small vidalia onions or type sweet onion, finely chopped
1 teaspoon table salt
1/4 teaspoon black pepper
4 tablespoons ketchup
1/2-2/3 cup sweet milk or half-and-half
Sauce
4 tablespoons apple cider vinegar
2-4 tablespoons dark brown sugar, packed firm (to taste)
1/2 cup ketchup

Meatloaf: Combine meat loaf ingredients and place into a loaf baking dish.
Smooth out top.
Sauce: Combine sauce ingredients and pour on top and sides of meatloaf.
Bake@ 350 degrees Fahrenheit about 1 hour to 1 hour 15 minutes or until done.
ENJOY!
*The addition of 1 or 2 teaspoons of Kitchen Bouquet® makes this recipe very good.
**Recipe should be"plump" from the addition of the milk or Half& Half®.
It should NOT be runny.
***A second batch of sauce served hot is good to serve with the meatloaf.

1/2 cup ketchup

3/4 cup finely crushed saltine crumbs

Preheat oven to 350 degrees.
Lightly grease a 5x9 inch loaf pan.
Press the brown sugar in the bottom of the prepared loaf pan and spread the ketchup over the sugar.
In a mixing bowl, mix thoroughly all remaining ingredients and shape into a loaf.
Place on top of the ketchup.
Bake in preheated oven for 1 hour or until juices are clear.

1¼ hours 5 min prep

2-2 1/2 lbs ground chuck
1 large egg
1 cup finely chopped onions (, or you can use 2-3 Tblp dried onion flakes if the kids object to actually seeing the onion)
1 cup milk
3 pieces bread, crumbed in food processor
1 teaspoon salt
1/8 teaspoon pepper
1/3-1/2 cup Heinz Chili Sauce (NO SUBSTITUTION on this ingredient)
Topping
1/2 cup catsup
1/2 cup shredded American cheese or mild cheddar cheese or monterey jack cheese

Mix ground chuck with breadcrumbs.
(extra lean works well too).
Add salt,pepper and egg.
Mixing with you hands now, add the Heinz Chili Sauce and the milk.
Seperate the mixture in half and form 2 loaves.
They will both fit comfortably in a 13" by 9" pan.
Mix the topping together and spread on the top and the sides of the loaves.
Cook at 375 for one hour or 400 for 45 minutes.
Check for firmness.
Let rest for ten minutes before cutting.
Tips---------.
If you have stale bread you can lay 2 slices under each loaf and it will soak up the grease so your meatloaf is a bit leaner upon serving.
Also, you can use the Chili Sauce on top of the meatloaf instead of catsup.
This makes it spicier but my mother never did this because it would have given away her"Secret Ingredient" -- and the kids probably will like it better with catsup on top.
