Banana Bread
1/2 cup shortening
1 cup sugar
2 eggs
3 large bananas
1/4 tsp. salt
2 cups flour
1 tsp. baking soda
1/2 cup chopped nuts (optional)
Cream shortening and sugar. Add eggs and mashed bananas. Beat well. Add remaining ingredients. Mix well. Bake in ungreased loaf pan 55 to 60 minutes @ 350 degrees. Makes 1 large loaf.
Option: If you like a dense texture, use bread flour. I love it with bread flour.

-1 cup of sugar
-1/3 cup butter, softened
-2 eggs
-1 1/2 cups mashed ripe bananas ( the riper the better)
-1/3 cup water 1 2/3 cups all-purpose flour
-1 teaspoon baking soda
-1/2 teaspoon salt
-1/4 teaspoon baking powder
--u can mix all the ingredients in the correct order with a kithchen aid if u want (it's a little easier)--
Heat oven to 350. Grease bottom only of loaf pan(if you get the grease on the sides wipe it off b/c it will rise funny if u don't), 8 1/2 x 4 1/2 x 2 1/2 or 9x5x3 inches. Mix sugar and butter in 2 1/2 quart bowl. Stir in eggs until blended. Add bananas and water; beat 30 seconds. Stir in remaining ingredients just until moistened. Pour into pan. Bake until tooth pick inserted in center comes out clean, 8 inch loaf 1 1/4 hours, 9 inch loaf 55 to 60 minutes; cool 5 minutes. Loosen sies of loeaf from pan; remove from pan. Cool completly before slicing.

This is an easy one. Makes two loaves. While cooking, I usually gently shake the pans so that the edges do not cook too quickly-sort of 'redistribute ' the batter.
1 cup of sugar
1/2 cup of butter (this equals 1 stick of butter)
2 eggs
2 cups of flour
1 teaspoon of baking soda
3 old bananas mushed up (do not forget to cut the ends off!)
I set oven on low temp- 325 degrees. Put the loaf pans in oven and check in about 30 mins. Shake them, and then figure another 25-35 mins. Use a toothpick to check center-if it comes out real 'battery' then stick back in and check every 5 minutes or so. Keep in mind that the bread will continue to cook 4-8 minutes after it is out of the oven.

I don't have the recipe with me, but try the one from 'The Lady and Sons cook book by Paula Deen. It is, by far, the best I have ever had.
