Lentils and rice .
1 cup lentils (brown or red, rinsed) {25 cents}
1 cup uncooked rice {20 cents}
1 yellow onion {35 cents}
1 can diced tomatoes {50 cents} (Or 1 cup chopped tomatoes)
2 cans broth+1 cup water OR 3 1/2 cups water+ 2 bullion cubes OR 3 1/2 cups water+2Tbsp bacon fat
Salt, pepper, paprika, parsley, thyme all season to taste
Saute onions in a little butter or oil in medium pot.
Throw everything else in, bring to boil and simmer 20-25 minutes or till lentils are tender. Add a simple spinach salad on the side tossed w/salt,pepper & red wine vinegar.
Dinner for 4 under $3.00
Really, really cheap, quick and easy.

Mine is even vegetarian, kinda. Not on purpose. I just like it. My mom made it when I was a kid. It's called Tomatoed Macaroni. You mix chopped canned tomatoes--recipe calls for one 16-oz., but I like to use two, or one large can--with 2 tablespoons of butter/margarine/olive oil, 1 teaspoon salt and 1/4-1/2 teaspoon (depending on whether tomatoes are already seasoned in the can). Boil, reduce heat, simmer for 12-15 minutes. Meanwhile, cook your macaroni or whatever small pasta you like, 2 cups measured dry. Pour sauce over macaroni and stir. On top I like to put lots of (imitation/cheap) grated Parmesan cheese. Very good!

I've had a few,
-buckwheat/wholewheat pancakes with home made applesauce
-Mac & cheese with canned tomatoes or salsa
-tuna casserole
-ground beef boiled with potatoes & frozen veggies
-homemade lentil soup with a tomato juice or V8 base & any veggies that are in the fridge.
-Lipton soup mixes with an egg stirred in.

Ramen noodles prepared without the bouillon flavouring and served with saucy stir fried vegetables. The frozen Thai veggie mix is usually the favourite in my house.

Jambalya is my all-time fave at the same time as it is composed of Soul foodstuff. "dirty Rice" could be an intensive second. Cookbooks....I have purely ever considered one -- which I loaned to my father and not gotten back -- and that i visit't keep in mind the call!

Chicken legs. cooked in the oven and covered in BBQ sauce. It's cheap and easy. I also make Rice A Roni fried rice and a can of veggies to go with it. Everybody loves it and it's cheap.

Any kind of dried beans (soaked and cooked).
Any kind of sausage/ham/or leftover meat.
Saute in skillet, onion,celery,carrots,garlic/and add
to cooking beans. Add bay leaf/and any green
dried spice (basil/thyme/parsley, etc.-) Make cornbread if
you have cornmeal/flour/baking pwdr/l egg/sugar&salt/some
kind of oil and bake at 375.
* * * * * * * *
Another one is pancakes....

I make cream sauce from the corn starch box and add turkey and peas, and then put it over toast.

mexican spaghetti, it's fideo with bell peppers, chopped onions,garlic clove, tomato sauce, cumin, salt n pepper and bits of chicken. it's really good!!
