or buying them already made...And what about using white chocolate vs regular coco?

Some homemade cake recipes would be great too! Someone suggested using unsweeted applesauce in place of eggs, and oil..Can this be done? Wont it affect the flavor of the cake?

White Chocolate Brownies Recipes

Ingredients:
1 cup butter
12 ounces good-quality white chocolate, chopped
3 cups all-purpose flour
2 cups granulated sugar
1 teaspoon salt
5 eggs
1/3 cup half-and-half
Vanilla ice cream
Purchased caramel sauce (see note)
***WHITE-CHOCOLATE SAUCE***
6 ounces white chocolate, chopped
1 1/2 tablespoon butter
1/4 cup half-and-half

Directions:

Preheat oven to 375 degrees. Grease a 9-by-13-inch pan.

Use a double boiler to slowly melt together butter and white chocolate.

In large bowl of electric mixer, stir together flour, sugar and salt. With mixer at low speed, beat in white-chocolate mixture, then eggs and half-and-half; beat just until blended. Pour into prepared pan. Bake 20 minutes, then reduce oven to 325 degrees and bake about 12 minutes more, until lightly browned and set in center (see tester's note).

Let cool in pan on a rack 30 minutes. Turn out onto a cutting board or cake rack; let cool completely. Trim off brown edges; cut remainder into 12 pieces.

To serve: Arrange brownie on a plate; top with vanilla ice cream, white-chocolate sauce and caramel sauce.

WHITE-CHOCOLATE SAUCE

Melt all ingredients together in a double boiler or at low power in a microwave; stir until smooth. (Sauce is thin.)


Applesauce Cake Recipes

Ingredients:
1/2 cup Shortening
1 cup Firmly packed light brown sugar
1 cup Applesauce
2 1/4 cups All-purpose flour
1/2 teaspoon Baking soda
1/2 teaspoon Salt
1 teaspoon Baking powder
3/4 teaspoon Apple-pie spice
1 cup Chopped nuts

Directions:

Cream shortening; add sugar gradually, beating until light and fluffy. Add applesauce. Sift together dry ingredients and add to creamed mixture. Fold in nuts.

Pour into loaf pan (9 x 5 x 3 inches) lined on the bottom with greased wax paper. Bake in preheated slow oven (325 F) for about 1 hour. Cool for 5 minutes.

Turn out on rack and peel off paper. Cool, and frost as desired.

Blooming Brownies Jamie Oliver
Serves 20

250g unsalted butter
• 200g dark Fairtrade chocolate (70% cocoa solids), broken up
• optional: 75g dried sour cherries
• optional: 50g chopped nuts
• 80g cocoa powder, sifted
• 65g plain flour, sifted
• 1 teaspoon baking powder
• 360g caster sugar
• 4 large free-range or organic eggs
• optional: zest of 1 orange
• optional: 250ml crème fraîche

Preheat your oven to 180°C/350°F/gas 4. Line a 25cm square baking tin with greaseproof paper. In a large bowl over some simmering water, melt the butter and the chocolate and mix until smooth. Add the cherries and nuts, if you’re using them, and stir together. In a separate bowl, mix together the cocoa powder, flour, baking powder and sugar, then add this to the chocolate, cherry and nut mixture. Stir together well. Beat the eggs and mix in until you have a silky consistency.

Pour your brownie mix into the baking tray, and place in the oven for around 25 minutes. You don’t want to overcook them so, unlike cakes, you don’t want a skewer to come out all clean. The brownies should be slightly springy on the outside but still gooey in the middle. Allow to cool in the tray, then carefully transfer to a large chopping board and cut into chunky squares. These make a fantastic dessert served with a dollop of crème fraîche mixed with some orange zest.

Brownies

Melt together over hot water (double broiler):
2 squares of unsweetened chocolate (2oz)
1/3 cup shortening

Beat in:
1 cup sugar
2 eggs

Sift together and stir in:
¾ cup sifted flour
½ tsp. baking powder
½ tsp. salt

Mix in:
½ cup chopped nuts

Spread in greased and floured 8” square pan (8”X 8” X 2”). Bake until top has a dull crust. A slight imprint will be left when top is touched lightly with finger. Cool slightly…then cut into squares. Bake at 350 degrees for 30 to 35 minutes. Makes 16 2” squares.

Nestle Tollhouse has a coco powder especially for making homemade chocolate cakes, brownies and icing...etc...on the container is a recipe for brownies that is terrific!!!
