Don't jump into punching hard surfaces right away. Sho-lin monks spend the first six months hitting water before any other surface, then sand then rocks, finally stone. three things

1. start soft
2. before and after do hand exercises (i.e. like a grip ball, or hand grips.)
3. Most people who train seriously in hardening the hand lose dexterity, take up a hobby that uses your fingers (I play the piano)

You have the basic idea right.

Now instead of punching something hard, punch the heavy bag 100 times with each hand.

Always wrap your hands first and wear a good pair of bag gloves.

Believe me, your hands will become very strong. Eventually, when you make a fist, you'll look at the striking area of your fist and the areas between the knuckles will be completely filled in with hard tissue and there will be no indentations between the knuckles. Instead it will be one continuous surface across the striking area of the fist.

This added support between the knuckles adds strength and allows you to punch much harder than someone who has not strengthened their fists in this way.

Another way is to hit the punching bag. Maybe a little sparring?
