It is the fat content that makes one type of cheese healthier. I think Sharp has a higher fat content than Mild and Edam has even less.
Check the nutritional information on the package.

As a rule those that melt the best have the greater amount of fat :-(

It just has to do w/ how long the cheese is held, to give sharper or milder flavor. No nutritional differences that I'm aware of.

I like them both, but I think sharp is better tasting and better for recipes.

the haelth i think is the same its just the flavor thats different
