Macaroni and cheese is generally a tube- or spiral-shaped pasta blended with a cheese sauce. The sauce is usually made by melting cheddar, american, or other medium-hard cheese in a mixture of scalded milk, butter, a few grams of flour (for thickening and binding), and seasonings. The sauce can be blended with the pasta and served immediately, or poured into a baking dish, topped with more cheese and/or bread crumbs, and baked until bubbling.

Macaroni and cheese is usually made with elbow macaroni, but you can use just about any heavier pasta. There's a little bit more to the recipe that what you're thinking. Usually you add milk or cream and seasonings. Some people top it with breadcrumbs or crushed crackers for a yummy topping.
