A can of diced chilies or chipotles, some smoked sausage or chorizo and drained diced tomato!

If it's not too late, mix in a bit of dijon mustard (like 1 tsp) or dry mustard powder (½ tsp) into the cheese sauce for added zip.

Or, fresh bread crumbs whirled in the food processor w/ a little melted butter... top the mac and cheese w/ that and bake until top is crunchy.

I would skip the bread. Just too much starch. You can add tuna, peas, cream of chicken soup and have tuna casserole. You can add little smokies or slices of any sausage. You can crush potato chips and sprinkle on top for the last 15 minutes of baking. You can add sour cream to the mixture. Pepper Jack cheese and green peppers.

Add bacon pieces, and put it an over proof dish, top with bread crumbs and shredded cheese, put in broiler until all bubbly and brown.

My mother-in-law puts in dried onion flakes and celery chopped up really, really tiny. She also says to use extra aged cheddar, that makes a night and day difference. Hers is the best!

A tiny pinch of chilli powder, or maybe some powdered/crushed garlic. Or you could roughly chop some fresh spinach and let it wilt in the pot. Yum!
