-marinate with store bought teriyaki sauce then grill
or
-garlic powder +pepper+salt then bake
or
-coat with egg, bread crumbs + parmesan then bake

I also love chicken thighs this is simple and taste great if you have not already tried it.Set oven at 357 to 400 depending on range. Just get a 16fl. oz. of zesty Italian dressing and a baking pan ,put chicken in pan cover with the dressing, cover with foil and bake in oven for a hour or 1 1/2 hours to make more tender. Watch him dig in! Good Luck!

This is a Mexican recipe, but I love it-- and very spicy!
Get a jar of Pipian cooking sauce (it's a chile and pumpkin seed paste you blend with water) and a jar of nopalitos (tender cactus). Brown the thighs in a skillet, then add the reconstituted pipian sauce, and simmer for about 30 minutes, or untill the chicken is very tender. Drain the nopalitos and add to the chicken, and cook for another 10 minutes. Serve with rice.

Seems to me I remember a recipe I wanted to try called Bourbon Chicken and it was made with thighs.
Also you can do any Jerk Chicken recipe and use thighs. Jerk is a big cooking favorite in the Caribbean

STUFFED CHICKEN THIGHS
6-8 thighs, deboned & skinned
3-4 c. stuffing
STUFFING:
6-8 slices bread (wet, not too wet)
1 sm. onion, chopped
2 stalks celery, chopped
1 apple, chopped
2 eggs
3 tbsp. butter
1 tbsp. sage
Salt & pepper
CHICKEN CREAM SAUCE:
1 c. chicken stock
1/2 c. sour cream
1/2 c. milk
1 tbsp. flour, for thickening
1/2 c. dry vermouth (opt.)
Sauce can be made with one can cream of chicken soup and 1/2 cup milk.
1. Debone chicken.
2. Mix stuffing.
3. Flatten chicken with meat cleaver.
4. Stuff and roll thighs.
5. Place in pan, seam side down.
6. Cover with sauce.
7. Bake at 325 degrees for 45 to 55 minutes.
8. Serve hot or cold.

Pesto Stuffed chicken Thighs:
50 min 10 min prep
4 servings
6 tablespoons pesto sauce (basil sauce,recipe at end)
8 chicken thighs, boned
3 tablespoons olive oil
2 onions, chopped
2 (14 ounce) cans chopped tomatoes
1 tablespoon tomato puree
fresh basil leaves (a good handful)
1/4 pint white wine
1 red pepper, deseeded and sliced
1 yellow pepper, deseeded and sliced
1 orange pepper, deseeded and sliced
2 teaspoons ground paprika (to garnish)
2 teaspoons basil leaves (to garnish)
salt
freshly ground black pepper
Pesto Sauce
1 cup tightly packed fresh basil leaves
3 cloves garlic, crushed
2 ounces chopped almonds
1/2 cup virgin olive oil
1 ounce butter
1 ounce parmesan cheese
1. Spread a little pesto under the skin of each chicken thigh.
2. Heat 2 Tbls of oil in a heavy based saucepan and saute chicken in batches until lightly browned all over.
3. Remove with slotted spoon and reserve whilst saueing the remainder.
4. Heat remaining oil in pan add onions and saute for 3 minutes.
5. Stir in tomatoes and Tomato puree.
6. Add basil leaves and simmer for 5 minutes.
7. Stir in white wine and simmer for 5 minutes more.
8. season to taste.
9. Lay peppers in a large ovenproof dish,pour over tomato sauce,top with chicken and sprinkle paprika over.
10. Bake at 375F/190c for 25 minutes.
11. Garnish with some more Basil leaves.
12. -------PestoSauce--------------------.
13. Liquidise all ingredients.

well i'm not partial to chicken thigh either only cause they're kind of fatty. but you can't go wrong with a chicken rub. here's hatian chicken thighs!!
Ingredients:
• 4 limes, juiced
• 2 oranges, juiced
• 1/4 cup vegetable oil
• 1 Tablespoon fresh thyme, minced
• 1 Tablespoon fresh rosemary, minced
• 1 Tablespoon brown sugar
• 4 green onions, minced
• 3 cloves garlic, minced
• 1 1/2 teaspoons ground allspice
• 1 Scotch Bonnet (or Habanero) pepper, minced
• 8 chicken thighs, bone-in and skin-on
• salt
• Freshly ground black pepper
• Green onions, for garnish
• Lime wedges, for garnish
• Orange wedges, for garnish
