Something I often don't think of until it's too late is a nice omelette. Beat up 3 eggs, add just a little milk, drop in a sizzling, buttered pan, and add just about anything: mushrooms, chopped ham, cheese, scallions, red peppers, tomatoes. It's a great way to use up leftovers.

Try some Matzah ball soup. It's jewish, I make it on a lot of morning's when I'm gonna have a busy day ahead. I don't actually use Matzah crackers, but saltines work just fine ussually. Crush the crackers up pretty good, mix them with some eggs, and knead it together to make a nice dough. Pull pieces out of the dough and roll them into balls the size of a golf ball. Drop them in boiling water, add a chicken boillion cube, and some parsley, and let it boil for about five minutes, uncovered. When the matzah balls turn sort of white, it's ready to eat.

Broccoli Chicken Divan
11 ounces chopped fresh broccoli
1 cup cubed, cooked chicken meat
2/3 (10.75 ounce) can condensed cream of broccoli soup
3 tablespoons and 1-3/4 teaspoons milk
1/3 cup shredded Cheddar cheese
2 teaspoons butter, melted
1 tablespoon and 1 teaspoon dried bread crumbs
1.Preheat oven to 450 degrees F (230 degrees C).
2.Place the broccoli in a saucepan with enough water to cover. Bring to a boil, and cook 5 minutes, or until tender. Drain.
3.Place the cooked broccoli in a 9 inch pie plate. Top with the chicken. In a bowl, mix the soup and milk, and pour over the chicken. Sprinkle with Cheddar cheese. Mix the melted butter with the bread crumbs, and sprinkle over the cheese.
4.Bake in the preheated oven for 15 minutes, or until bubbly and lightly brown
