I don't cook a lot, but when I try to prepare chicken, it usually turns out too dry. I like moist chicken but I'm also health-conscious. Does anyone have an amazing chicken recipe that they would like to share?

This is not just a recipe, it is a method. Follow it to the letter and you will have perfectly roasted juicy chicken

Roast Chicken with 5 variations

Ingredients
1 Whole chicken, about 4 lbs. giblets removed, washed, patted dry
4 tablespoons unsalted butter, softened
3/4 teaspoon coarse salt
freshly ground pepper to taste

Method
Heat oven to 450 degrees

Rub the chicken inside and out with butter. Sprinkle inside and out with salt and pepper.
Place chicken on a rack in a roasting pan. Put chicken in oven. Reduce heat to 350.
Cook until juices run clear when thigh is pierced with knife and temperature read 170 degrees on an instant read thermometer, about 1 hour. Allow chicken to sit 10 minutes before cutting into serving sizes.

Variations
1. Lemon Chicken. Prick a whole lemon all over with a fork; place in cavity of chicken before roasting.

2. Herb-roasted Chicken. Place fresh herbs, such as thyme, basil, parsley, and/or oregano inside cavity.

3. Garlic-roasted Chicken. Place whole peeled garlic cloves inside cavity.

4. Red velvet Chicken. Sprinkle chicken lightly with paprika or chili powder.

5. Tarragon Roasted chicken. Fill cavity with 3 peeled and split shallots and 1/2 bunch fresh tarragon.

Try buying one of those coating systems that you dip your chicken into then bake in the oven. They help to keep the flavour in producing a moist chicken with very little on your part to be a successful cook. Enjoy.

Hi, I got a George Foreman grill for Xmas, and it's the only thing I cook my chicken on now! It always turns out juicy, and all the fat drips to the grease tray. Good only for boneless I guess.
I use clubhouse "vegetable" spice, it's a lovely blend of onion, garlic, red bell pepper, sundried tomato, parsley, and tons more ingred. It's the best spice I have found, and it's all you need to add to your chicken. Try this, it's quick, easy, and very, very good.

Grill it over an open flame. Shake up a bottle of beer and spray over the grilled chicken for flavor. Ladle on barbecue sauce. Eat.

It isn't popular these days, but I like to poach my chicken. Another good way is to steam it. Cook with the skin if you broil or bake it, and take the skin off before you serve.

In all reality, the rotisserie chickens from grocery stores are really good and they can't get any easier! (for when you don't want to cook)
