Roasted are good but mash is very comforting on a wintery night and Jacket potato and coleslaw with salad in the summer and new potatoes at Christmas. Can you spot the Irish heritage?Lol!

Patates Douces Frites
INGREDIENTS:
4 sweet potatoes
3 Tablespoons butter (or more,if needed)
sugar (as needed)
PREPARATION:
1. Boil the sweet potatoes until the tip of a fork can pierce the potatoes but they are still firm.
2. Drain the potatoes and cool to room temperature. When they reach room temperature, place in the refrigerator for 1 hour.
3. After 1 hour, peel the potatoes and cut them lengthwise into 1/2-inch thick slices.
5. Fry in hot butter until they are brown.
To serve:
Place the potatoes on a warmed platter, sprinkle with sugar and serve immediately.
Candied Sweet Potatoes
INGREDIENTS:
6 lbs. sweet potatoes
1 cup dark brown sugar
1 Tablespoon freshly ground nutmeg
2 Tablespoons cinnamon
1 cup cold unsalted butter, cut into pieces
PREPARATION:
Preheat oven to 400°F
1. Bake the sweet potatoes for one hour.
2. Allow to cool; then remove the skins.
3. Butter a baking dish, large enough to hold the potatoes in three layers. Slice the potatoes into rounds about 1/2-inch thick.
4. Mix the brown sugar, cinnamon and nutmeg together. Arrange one layer of the potatoes and sprinkle with some of the sugar mixture. Dot with butter. Repeat twice more.
5. Cover and refrigerate, if you have prepared them in advance. Or bake, uncovered, for 20 minutes in a preheated 400°F oven.
To serve:
Serve hot.
