There are several community service organizations out there - it just depends on what you are looking for.
A hospital/nursing home - be a candy striper, read to elderly, play games, spend time with sick
Salvation army, Planet Aid, Your Local Social Services
Local school (if you have children)
Picking up trash
Ronald McDonald House (usually associated with Children's hospitals) - make dinner, provide a friend
Homeless shelters/Food depots
Local church - food drives, banquets, services
Recycling place
Harvesters (food for the low income families) - You can organize it, deliver it, donate it, etc.

Contact your local volunteer center. They can provide all sorts of one-time or short-term volunteer activities that match your interest and meet real community needs as well. Volunteer centers can provide you with the appropriate documentation you may need as well.

Through my volunteer center, I tutor children at the local library, enhance visitor experience at the local museum, package food at the local food bank, clean our parks and beaches, and a lot of other projects.
The other option is to try the local chapter of the United Way. They also specialize in volunteer placement:

If you are cold natured --- chose something outside, since summer is near.
If you are hot natured--- chose something in doors.
If you have a sort of special skill, request that-- finish the community service and apply with that particular job.
