I´d like you to help me with this question:
I go to the DVD store yesterday and the assistant says to me: "Maybe we´ll bring some new releases tomorrow".
Today I say to a friend of mine : "The assistant said maybe they´d bring some new releses today". Is it OK grammatically speaking?

Yes, but I would say have instead of bring. ("The assistant said maybe they'd have some new releases today".) However, I also disagree with the assistant saying "bring". His not really bringing anything per se, it's possessing it.

Also, make sure to use past tense when speaking of the past. You should have written it as this: "I went to the DVD store yesterday and the assistant said to me".

Yes, it's fine. I would have added "that", i.e. "The assistant said that maybe they'd bring...."
