Raspberry Vinaigrette Dressing

Ingredients:
1 C. raspberry vinegar
1 C. olive oil
1 C. vegetable oil
1 C. maple syrup
1 T. Poupon mustard
1 T. chopped tarragon leaves
1 t. salt

Combine all ingredients and mix well in mixer or food processor. Mix until mixture thickens and is blended well.

Chipotle Honey Dressing

Ingredients
6 canned chipotle peppers
1/4 cup balsamic vinegar
1 tablespoon Dijon mustard
1/4 cup honey
3/4 cup extra virgin olive oil
1/2 teaspoon coarse salt

Method
Combine peppers, vinegar and mustard in a food processor fitted with chopping blade or blender; purée until almost smooth. Add honey and blend. Slowly pour oil through feeder tube with motor running. Pour into cruet or bowl; stir in salt. Refrigerate until rady to use.

Cranberry Vinaigrette Salad Dressing

INGREDIENTS:
1/3 cup frozen cranberry juice concentrate, thawed
3 tsp Dijon mustard
3 tsp red wine vinegar
1/4 tsp dried basil
1/4 tsp thyme
1/4 cup olive oil
salt and pepper to taste

PREPARATION:
Whisk together the cranberry juice concentrate, mustard, vinegar and herbs. Slowly add olive oil, combining well.

The best balsamic-

1 teaspoon mustard
3 tablespoons balsamic vinegar
4-5 tablespoons olive oil
1 clove crushed garlic
salt and pepper to taste.

start by mixing balsamic and mustard, then add remaining ingredients.

My favorite and very simple dressing is vegetable or olive oil, crushed garlic, salt, pepper and lemon juice. That's all. Delicious! For a creamy dressing repeat the above with a little mayo or sour cream.

Whole Foods Blue Cheese Dressing

6 oz. Point Reyes Blue Cheese
1 cup sour cream
¼ cup buttermilk
2 Tbsp. finely minced chives or green onion tops
Dash of worcestershire sauce
Dash Tabasco
Kosher salt & pepper to taste

Mash cheese with a fork in a bowl, leaving some larger chunks. Stir in sour cream and buttermilk until creamy, but with bits of cheese remaining. Add remaining seasonings, mix well. Refrigerate. Makes 2 cups.

LEMON VINAIGRETTE

1 1/2 tablespoon Dijon mustard
1/4 cup freshly squeezed lemon juice (2 lemons)
1/4 cup good olive oil
3/4 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

Whisk together the mustard, lemon juice, olive oil, salt, and pepper to make a vinaigrette.

Brown Derby Special French Dressing

1/4 C. Water
1/4 C. red wine vinegar
1/2 tsp. sugar
1 1/2 tsp. lemon juice
1/2 tsp. salt
1/2 tsp. pepper

3/4 tsp. dry mustard
1/2 clove garlic, minced
1 C. mild olive oil

Combine all ingredients. Chill. Shake well before serving.

1 cup EVOO

2 cloves minced garlic
1 Tbsp. dry oregano
Salt and fresh black pepper to taste

Mix well and store in fridge at least 3 hours for best flavor.

Macaroni Grill Roasted Garlic Lemon Vinaigrette

2 Tbsp. red wine vinegar
3 Tbsp. honey
½ tsp salt
½ oz. roasted garlic
3/4 cup virgin olive oil
½ lemon, juiced (no seeds)

Place vinegar, honey, salt and roasted garlic in a food processor. Puree until garlic is chopped very fine. With the food processor still running, add olive oil and lemon juice. Refrigerate until ready to use.

Buttermilk Ranch Dressing

1/3 cup buttermilk
1 cup plain yogurt
2 Tbsp. grated Parmesan cheese
1½ tsp. of each dry herb: chives, dill weed, oregano, parsley
1½ tsp. garlic powder
1 Tbsp. fresh ground black pepper
Dash hot sauce

Mix all well, store in refrigerator at least 3 hours before serving for best flavor.

this is what i put:
i like spicy, so i always put a hot pepper or chilly pepper in the salad
oil (any kind)
lemon
salt (any kind)
fresh ground black pepper
you can add: a little thinly chopped coriander
or parsley

Blend cucumber with yogart and add a little seasoning, yum. Then there is just oil, vinegar, and spices.
