The CIA, Culinary Institute of America in Hyde Park New York, which is about an hour outside of NYC.
You can choose your programs from a specialty that is 6 months to 2 yr study. Also, there are week long courses to be sure it's what you are looking for and is the school with the intructors you are comfortable with.
As a would be chief, I have taken many 3-5 day courses, and I never fail to learn new and exciting dishes as well as techniques.

Pastry Chef? Santa Barbara City College has one of the best Culinary programs in California. Its cheap too. Very demanding, you have to wake up at like 5 in the morning to start cooking! But yeah, i think your looking for pastry chef/baking. Good luck

First you need to decide if you want to stay local or move away. If you are staying local then ask around at restaurants and bakeries to find a reputable and quality school to attend. Dont just go by the name on the side of the building. Le Cordon Bleu has a great reputation, but the one that is in my local area is terrible, and everybody that hears the name groans or laughs if somebody says they graduated from there. Then once you have gotten a couple schools to choose from look into their program options to see which one you are most interested in and will help you the most get the job that is right for you.

depends on where you live The American Culinary School in/of New York is probably the best known, but most large cities offer some sort of bread making pastry classes.
