here's one i use, simple & real good
Seafood Salad
1 pound small shrimp, cooked
1 pound backfin crabmeat or imitation crabmeat
1/2 cup small black olives
2 ripe tomatoes, chopped
1/2 cup celery, chopped
1/2 pound small shells pasta, cooked and cooled
1/2 cup mayonnaise
1/2 cup plain yogurt
1 cup chili sauce
Combine first 6 ingredients in a large bowl and toss. Chill until ready to serve. Combine last 3 ingredients and whisk together. Just before serving, place salad on individual serving plates and scoop a desired amount of dressing on top of salad. Toss and serve cold.

Ponderosa Steakhouse Seafood Penne Pasta Salad
Ingredients:
1 pound imitation crab meat
1/2 cup onions, chopped
1/2 cup green peppers, chopped
1/2 cup celery, chopped
1 1/2 pound penne pasta (cooked)
1 pound sour cream
16 ounces bottle ranch salad dressing
1/4 cup milk
Directions:
Cook and cool pasta. Mix sour cream, dressing and milk (let sit 2 hours).
Mix together onions, peppers, celery, crabmeat and pasta. Mix well with dressing. Chill at least 2 hours.

Seafood Stuffed Green Plantains
Ingredients:
2 large green plantains, sliced, fried and mashed
1 medium onion, diced
1 green pepper, diced
2 cloves garlic, mashed
2 tablespoons tomato sauce
1 bell pepper, diced (pimiento morron)
5 green pitted olives, diced
1 cup lobster meat, slightly cooked
1 cup fresh shrimp, peeled and cooked
1 cup crab meat, cooked
1 tablespoon olive oil
Fresh parsley to decorate
Directions:
Prepare Creole sauce as follows: In large frying pan, add olive oil, onion, green pepper, bell pepper, olives, tomato sauce and cook at medium heat until tender. Add seafood and cook in low heat for 15 to 20 minutes.
In a large bowl, mash plantains, 1 tablespoon olive oil, garlic and blend well. Turn over plantain mixture (mofongo) onto a 7-inch diameter plate.
Make a hole in center of plantain mixture. Fill with seafood sauce. Garnish with parsley and very thinly sliced bell pepper. Serve with tossed salad, oil and vinegar.
