it is soy wax candles. I can't figure out why sometimes there is a sinkhole, and sometimes it doesn't.

You are probably heating your wax at too high of a temperature, also it is important to pour your candles at room temperature of at least 72 degrees but no more than 79 degree room temperature. Ways to avoid a second pour are buy a heat gun that will melt the top layer of the wax until it fills in your sink hole and another method is to place your candles under a heat rack but for home use you can use your oven set to high broil as it only take a couple of minutes under the heat, too long and the wicks will catch fire also some heat guns temperature gets over 700 degrees be careful of these as they will weaken the strength of the jar and in some case shatter the glass. You don't have to worry about some of the scent being burned off as I have done this for years and I make a very high quality candle with an awesome scent throw.

It has to do with the temperature of the wax when you pour it. The hotter you get it, the more of a sink hole. Don't heat your wax too hot, and you won't get that. Also, if the wax gets too hot, the scent you put in it will evaporate out of the wax faster, and you won't get a good deep scent int he finished candle.
