What sort of engineer?
Mechanical: Explain and demonstrate how folded (accordion style) paper can support a great deal of weight.

Electrical: basic circuits, solar cells driving a small motor. Charging a Leyden jar; components such as capacitors storing a charge ... etc.

It really depends on what sort of engineering you do.

If you have to teach about engenner you shold search it on the comp. it should give you a fun worksheet to do
