There are different types of hot sauce. Hot sauce such as Tabasco is ok at room temp, it does not require refrigeration once opened. Hot sauce such as Pic ante Salsa should be refrigerated once opened. As for your question about serving temp...it is a preference, any answer is either correct and/or wrong.

Once it's open, I stick it in the fridge. Even if you use it cold, it will "heat" up after putting it on your food. I love hot sauce, cold or room temp!

Mine sits on our kitchen table never goes in the fridge and when you go to a resturant most keep theirs room temp also. Either way it doesnt affect how "hot" it makes the item your putting it on

i think room temp. because it brings out the flavor of the hot sauce, especially when it's Louisiana Style

I don't think it matters either way because once they hit the food they are going to be the temperature of the food that you are about to eat if you think about it. Does it matter?
